Grandma's Sausage Recipe
10 lbs ground pork
10 tbsp lawry's seasoning salt
4-1/2 tbsp white pepper
2 tsp marjoram
2 tsp savory
2 tsp all spice
2 tsp coriander
2 tsp mace
2 tsp ground powdered clove
2 tsp sage
3 - 4 slices bacon
With electric food grinder, grind pork and bacon slices. Add all above ingredients and mix with hands until well blended in. With meat press, make in thin patties and freeze in handi-wrap and scott wax paper until needed. Cook in covered frypan 20 minutes, turning over every 5 minutes.

English Bangers
Banger Seasoning
5 teaspoon ground white pepper
2 1/2 teaspoon mace
2 1/4 teaspoon salt
2 teaspoon ground ginger
2 teaspoon rubbed sage
1/2 teaspoon nutmeg
Sausage
2 1/2 lb. boneless lean pork shoulder or loin cut in cubes
1 lb. fresh pork fat in cubes
1 1/2 cup dry bread crumbs
1 1/4 cup chicken broth
3 1/2 teaspoon Banger seasoning
Grind pork and fat together using plate of meat grinder.
Add Banger Seasoning and mix well.
Grind again.
Stuff mixture into casings and tie in 4-5 inch lengths.
This mixture will be too fine to form into patties.
Bake or sauté as you prefer.

Stick to the traditional ones but make them with really good ingredients. Some of the ones available today are far too fancy for their own good. A local one to me is pork,stilton, and bramley apple. I saw them in a posh butchers and thought I would try them. The nearest I can describe them is vomit sausages. Vile, even the dog wouldn't eat them.

HOMEMADE MILD ITALIAN SAUSAGE
Ingredients needed:
* 3 pounds well-marbled pork butt, cut into 1/2-inch pieces
* 2 tablespoons minced garlic
* 1 tablespoon plus 1 1/2 teaspoons paprika
* 1 1/2 teaspoons toasted fennel seeds
* 1 tablespoon salt
* 1 tablespoon freshly cracked black pepper
* 1 teaspoon cayenne
* 1/2 teaspoon ground anise
* 2 tablespoons freshly chopped Italian parsley leaves
* 3 tablespoons dry red wine
* Pork casings, optional
Combine the pork butt, garlic, paprika, fennel seeds, salt, pepper, cayenne, anise, parsley, and red wine in a large bowl and toss well to coat. Refrigerate covered overnight or up to 24 hours.
Pass the mixture through a meat grinder fitted with a medium die. (Alternately, transfer to a food processor in 2 batches and process until finely ground.) To test the seasoning, heat 1 teaspoon oil in a small skillet, and cook about 2 teaspoons of the mixture. Adjust seasonings, to taste.
Using the sausage attachment on a mixer, stuff the meat into the casings, if being used. Twist and tie off to make 4-inch sausages. Alternately, shape into patties. Cook sausage in usual manner, making sure the internal temperature of the sausage links reaches at least 150 degrees F. Uncooked sausage can be stored in the refrigerator up to 3 days or freeze and use within 3 months.
Yield: about 3 pounds of sausage
Knockwurst with braised cabbage
(serves 6)
4 T butter
3lbs cabbage (sliced thin)
2 med onions (sliced thin)
1 large green apple (sliced thin)
1/2 C apple cider vinegar
1 C apple cider
2 T brown sugar
Salt and pepper
9 links of knockwurst (or cooked bratwurst, kilbassa may even be good)
Melt butter in large pot or dutch oven over med/low heat. Add onions, cook 18min. stirring occassionally. Add remaining ingredients, except for knockwurst, and cook uncovered for 1 hr. stirring occassionally. Tuck knockwurst into pot and cover, cook for 20min
