I had it once at a cafe on Palm Beach in Sydney and it was the best cake I have ever tasted. I have never had it since but would love to know how to make it.

Lumberjack cake

Serving size: Serves 6
Cooking time: More than 1 hour

INGREDIENTS

2 apples, peeled and finely chopped
1 cup of chopped dates or raisins
1 teaspoon of baking soda
1 cup boiling water
1 cup butter
1 cup sugar
1 egg
1 teaspoon vanilla extract
1½ cups flour

TOPPING

1/2 cup butter
½ cup brown sugar firmly packed
1-2 tablespoons milk
½ cup shredded coconut

METHOD

Combine apples, dates, soda and water; bring to the boil. Allow to cool to lukewarm.

Line and grease a 8 inch deep cake tin. preheat oven to 350 degrees.

Cream butter and sugar until light and fluffy, add egg and vanilla and beat well. Sift flour and beat in alternately with apple mixture.
Pour mixture into tin and bake for approximately one hour or until cooked.

To make topping:

By combining butter, brown sugar, milk and coconut in saucepan. Stir over low heat until melted. Spread over hot cake and return to oven for further 20 minutes, or until topping is golden brown.

Change to: cake US Metric

1 teaspoon bicarbonate of soda
1 cup boiling water
1 cup sugar
1 egg
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon salt
60 g butter
1/4 cup pecan nuts (optional)
Topping
60 g butter
1/2 cup brown sugar, firmly packed
1-2 tablespoon milk
1/2 cup shredded coconut

Line an 8" 20cm deep cake tin.
Heat oven to 180 degrees C.
(350 degrees F).

(layer pecan nuts on top pf cake before pouring topping on) Topping: Make topping by combining butter, sugar, milk and coconut.
Use the microwave or the stove top.

Lumberjack Cake
My good friend Jane gave me this recipe. It is wonderful served very fresh with a big dollop of cream!




Method

Preheat oven to 180 C
Combine dates with 1 cup of hot water and soda, set aside for 1 hour (I set aside for much less time than that). Beat butter and sugar until light and fluffy. Gradually beat in egg. Sift flour with pinch of salt and stir into mixture with vanilla. Mix in date mixture and apple. Spoon into a 20 cm lined cake tin. Bake for 40 minutes or until top is set. Place topping ingredients in a small saucepan and stir over medium heat until well combined. Remove cake from oven. Spoon topping over to cover and cook for 20-30 mins longer or until topping is golden and cake is cooked through. Remove from oven and cool in tin.

185g pitted dried dates, coarsely chopped
1 cup hot water
1 teaspoon baking soda
125g butter, chopped
250g caster sugar
1 egg, beaten
1 1/2 cups plain flour
1 teaspoon vanilla essence

3 cups wood chips (chopped finely)
1 cup flour
3 eggs
1 cup milk.

Mix together with chainsaw on HIGH. Top with red flannel frosting.
