I currently have 2. I have one camera with is a mix between a point and shoot and a digital SLR (so its called a "prosumer"), and then I have an ultra compact one that I take everywhere.
Granted there are tradeoffs to both...for example the ultracompact one doesn't come near the sharpness of my larger one. So..for more serious things I take the larger camera.
Since I started digital photography about 6 years ago, I have owned 4 cameras. The first was a very, very basic point and shoot, which I eventually gave away to a friend. My second was a little more advanced, because I was getting better at photography.
Basically, I buy a camera when the current one no longer meets my requirements. Each camera I have gotten is a little bit better to match my level of photography, wheras in film photography it was either: 35mm or SLR.

With film, you could just change to a different ASA (the good old days, remember?) or film type and that changed the way you looked at things photographically. Now, we need pixels and more pixels to accomplish that same sort of thing. With digital SLR's, "they" are finally approaching the convenience that we all took for granted with film cameras and I think "we" just keep buying the latest and greatest, thinking it will be "the ultimate camera" so we can stop buying. I actually DO think that my D200 will serve me quite well for years to come, just as my last film camera did, but I admit that I bought at least two othere digital cameras that I thought would be the answer to my dreams before that.

You really want a new PDA, dining room set, iPod, car, house or whatever.
Finally, after much yearning, you buy the desired item.
You're thrilled for about a week.
The thrill fades.
You start to feel empty and crave that emotional high, the sense of accomplishment or "being good enough."
So you decide that what you REALLY want is a new refrigerator, designer suit, vacation, deck…
And the whole thing starts all over again.

One, but I use both digital and regular. I still have 2-35mm B&W cameras from my tour of duty in "Nam in '68 and love them. Excellent craftmanship and superb b&w pics. I also have a newer, 1yo digital. Both serve their purposes.
