I love potatoes. There are many thing you can do them. However, I am looking for something different.

This is a traditional french recipe from the Alps:
GRATIN DAUPHINOIS (serves 6)

Ingredients
2lb (1kg) potatoes (waxy potatoes such as pink fir apple, russet)
1 or 2 cloves garlic, mashed
2 oz butter
2 cups (50cl) whole milk
5 oz (160g) French or Swiss Gruyère cheese
1 pint double cream
Salt and pepper


Step 1: Preheat oven to 360ºF (180 ºC). Slice the potatoes into thin slices (1/8 inch thick). Rinse in cold water. Drain and dry in a towel

Step 2: Put the potatoes in a pan and cover with milk. Add salt

Step 3: Bring to the boil starting at moderate heat for 5 minutes then low heat for 10 minutes. Stir from time to time.

Step 4: Rub a fireproof dish with garlic and grease it well with butter. Transfer half of the potatoes in the gratin dish. Add half the cheese, double cream and pepper to the layer. Put the second half of the potatoes and cover with the cheese and double cream left.

Step 5: Put the dish in the oven and cook for 1 hour at 360ºF (180 ºC). Gratin Dauphinois is ready when the top is gold and brown.

Wine suggestion: Red Bordeaux wine or Beaujolais Villages, not too dry white wine


Another good recipe (sorry, I dont have exact quantities)
Bake some meduim size pottoes at 350 for about 1 hour. Let cool, then cut in half lenghtwise. Gently empty the skin. Mix the inside of the potato with some sour cream, onion, salt, pepper, herbs (like chives or fresh basil, for example). Put back in the skins, and top with cheese. Bake again for about 15-30 minutes.

Vegetables – Hashed Brown Potatoes

4 cups potatoes, finely chopped or shredded
2 Tbsp onion, chopped
¾ tsp salt
1/8 tsp pepper
2 Tbsp butter
¼ cup hot water
Parsley

Combine the potatoes and onions, salt and pepper. Melt the butter in smooth heavy skillet, add the water, put the potatoes in a thin even layer, and cook slowly until golden brown crust is formed. Fold the potatoes over like an omelet, turn out on hot platter, garnish with parsley.

Oven Roasted Spuds

4-12 Potatoes
1 cup melted butter or Olive Oil
4 tablespoons of Rosemary,Tyme,Basil,Orangano

Mix all ingreants together in a bakeing dish cover with tinfoil and bake at 350 till Spuds are tender around 1 hour

Spicy Rosemary Roast Potatoes.

In a large mixing bowl put 1/4 cup of olive oil, add 1 tablespoon of finely chopped fresh or dried rosemary, add a teaspoon of mild chilli powder and a good shake of rock or sea salt, mix and leave for 10 minutes.
Meanwhile chop 6 - 8 potatoes, skin on , into quarters and then stir them into the mixture, empty contents on to a large baking tray & spread evenly, Cook on a medium to high heat for about 40 - 60 minutes or untill brown & crispy..

This also works really well with a combination of veg, And if you can get it i find Asda's own brand mild chilli powder the best... Enjoy :-)

IrinaC seems to have copied a cookery book. Never mind, plenty of yummy receipes. Here's some of mine.

Cut some thinly peeled waxy potatoes in 1/4 inch slices. Fry them gently on both sides in a little olive oil until lightly browned. Layer in a deep frying pan, which has a lid, with plenty of chopped spring onions, green bits included. Make up a pint of beef stock, an Oxo cube will do, and pour in the pan. bring to boil and put lid on pan, slightly off centre, to allow for escape of steam. Simmer for ten minutes then turn the layers of potatoes over so all get immersed in the liquid. Cook until most of liquid has evaporated. Turn out and serve with accompaniment of your choice.

In the north of England we sometimes make 'Specials'. These are large slices of potato, floury type are best, covered in batter and deep fried. To cook, slice large potatoes lengthways 1/4 inch thick. Pat dry on kitchen towel. Make batter from 4 oz self raising flour, 1/2 teaspoon of salt, 1/4 pint water + 1 scant tablespoon. Sift the flour and salt into a bowl, whisk in the water until smooth. Brush the potato slices in a little flour to encourage the batter to stick. Dip the slices in the batter and lower gently into a deep fat fryer, ensuring the oil is already hot. Cook until the batter is crisp and golden brown. Serve sprinkled with salt and vinegar. If you can get hold of tinned mushy peas you can make a sandwich of two potato slices with the peas in between before immersing in batter and frying.

Another treat when I was a child in the 1950's was 'Scotch Scallops'.

Slice potatoes thinly and layer in a shallow ovenproof dish with chopped onions and pieces of bacon. Add water just to the top of the layers with a teaspoon of salt and a dash of pepper with some of the bacon on top. Bake covered in oven for 20 minutes until the potatoes are tender. Removed the lid and sprinkle with a little pepper and continue cooking until the top layer of potatoes and bacon is browned and crisp then serve with peas or beetroot and red cabbage.

Good Lord - do you girls love potatos, chocolate, and cheese. Do you see a pattern on your way to a fat high or what. I eat potatos rarely and always fried as in ff. Get one small order once a month at McDees and stay away from fat hips.

make a home made pot pie. In a casserole dish put potaotes with peas and carrots and some kind of pot roast or chicken.And also put a can of cream of potato and mix it up.then make bisquick(mix cheese in the batter)and pour over top of it.Put it in the oven and bake. You can obviously change things around and add or take out what you do and don't like.Good luck!!!

Bourbon Mashed Sweet Potatoes

1 3/4 to 2 lbs sweet potatoes
1 tsp olive oil
1/2 cup heavy cream
1/4 cup bourbon whiskey
3 tblp packed light brown sugar
2 tblp molasses
1/8 tsp salt


pre-heat oven to 425
rub potatoes w/ olive oil (lightly) place on a foil lined baking sheet and babe til tender (45 min to 1 hr) remove, let sit until cool enough to handle.
peel & transfer the flesh to lg. bowl. add cream, bourbon, brown sugar, molasses, and salt, and beat on high with a hand-held mixer until smooth. cover to keep warm until ready to serve...........enjoy!

cut them into thin slices, toss in olive oil and season (I like to use either just salt or garlic) Pre heat a george foreman grill and then cook them in there until cooked. Yummy alternative to chips (fries) and you could possibly do them without the oil although they may stick - possibly you could just put a little oil on the grill if you wanted to reduce the amount needed.

in Ireland we have a potato dish called 'champ' boil your potatoes and mash them, chop up a bunch of spring onions and soak in a little milk with pepper, then stir into the hot mashed potato, they are usually served with beef sausages and onion gravy, but on their own with a big lump of butter ............ they are wonder-full.
