I've recently been experimenting with Indian cooking (made some pretty decent chana masala the other night). I've been on the lookout for easy recipes, but most things have insanely difficult-to-find ingredients or a need for special equipment. Any ideas?

You started well, if you want to vary thing you might start with vegetarian dishes, curry powder is readily available, and most Latin stores have cilantro, chilis, and some of the same spices like cumin, coriander and various types of lentils/beans.

Look up on the Net for recipes from an author named, Madar Jaffery, spiciness is somehting you can play with, but check out various websites and see what is available, you maybe surprise with a little research what might be in your area.
