1 lb 80% lean ground beef
2 cloves of garlic, minced or I grate it on a fine grater
1 tablespoon fresh parsley
2 tablespoons grated parmesan cheese
1/2 - 3/4 cup breadcrumbs I use the seasoned ones
salt and pepper to taste
Mix together and shape into balls. Fry them in a little olive oil until browned on all sides or bake them in a 400 degree oven for 12 minutes. Put 'em in your favorite red sauce.

Enchilada Meatballs
2 cups crumbled cornbread
1 (10 ounce) can enchilada sauce, divided
1/2 teaspoon salt
1 1/2 pounds ground beef chuck
1 (10 ounce) can tomato sauce
1 cup shredded Mexican cheese blend, divided
DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C).
In a large bowl, combine the cornbread, half of the enchilada sauce, half of the cheese, and the salt. Crumble the beef into the mixture, and blend well using your hands. Shape meat into 1 inch balls, and place on a 10x15 inch jellyroll pan, or any cookie sheet with sides to catch the grease.
Bake for 18 to 22 minutes in the preheated oven, until the meat is cooked through.
While the meatballs are cooking, warm the tomato sauce and remaining enchilada sauce in a saucepan. Remove the meatballs from the pan using a slotted spoon, and place in a serving dish. Pour the heated sauce over them, and sprinkle the rest of the cheese on top. Provide toothpicks for serving.

Oh my gosh your not gonna believe this I found a meat ball recipe that calls for Marijuana.. Can you believe that.? Be back with another recipe.
MEATBALL MORSELS
(36 balls)
1 lb. ground beef
1 egg
1/2 cup soft bread crumbs
1/4 cup ketchup
1 tbsp. parsley flakes
1 tsp. onion powder
1 tsp. salt
1/4 tsp. pepper
Thoroughly combine all ingredients; shape into 1" balls (36). Arrange 18 meatballs on dish. Cook at HIGH 4 - 6 minutes; stir once. Rotate dish after 3 minutes. Drain liquid. Repeat with remaining meatballs. Serve with favorite sauce or gravy.

Soak chunks of bread in Italian salad dressing. Add the saturated torn pieces to ground round or ground chuck, add raw egg, italian seasoning, grated parmesan (or romano). Combine w/ hands, don't stir or it will toughen the meat. Roll into whatever size meatballs you like, bake in baking pan at 375 til done (depends on size of meatballs & how brown you like them).
