Asian Cole Slaw

1 head green cabbage shredded
1/2 cucumber peeled, deseeded, cut in half lengthwise and sliced
1 carrot grated
1/4 red onion thinly sliced

Dressing
1/4 cup vegetable oil (substitute mayonnaise for creamy)
1 Tbls soy sauce
1 Tbls honey
1/8 tsp toasted sesame oil
dash of Tobasco
2 Tbls rice wine vinegar
1/2 lime squeezed
1 clove garlic and 1 slice of fresh ginger put through a garlic press

Blend or briskly whisk ingredients until oil is incorporated.
You can also use Italian dressing with soy sauce and honey when in a pinch for something quick and easy.

You can top with toasted sliced almonds, sesame seeds or chow mein noodles.

This is the way I make mine.

1 head of cabbage, chopped
in a separate bowl add about 2 to 3 heaping tablespoons Mayo, about 2 teaspoons sugar, 1 capful of vinegar and a splash of milk.

Mix altogether, taste, does it taste right, to sweet, to sour, add more sugar or vinegar, when it tastes right pour over cabbage, sprinkle top of slaw with paprika.

It's easy...just get a bag of coleslaw mix from your local grocer or if you really like to cook, buy a red cabbage, green cabbage and a carrot and shred them up together. Once you've got your mix, you'll need some salt (Lawrey's is my favorite), lemon-pepper or regular black pepper, vinegar, sugar and Marzetti's coleslaw dressing (they even make a 'lite' version for the weight conscious).

Simply get your mix, put it in a bowl, put in the Marzetti's, put in two cap fulls of vinegar, a little sugar and season with the salt and pepper (ground ginger adds a nice lil twist). Mix it all up. Let it sit for a couple of minutes and you're ready to eat. Good luck!

P.S. There's a recipe for coleslaw on the back of the Marzetti's if you'd like.

Ok, this is how I make it

Take a half small cabbagge
a medium onion
two large carrots
apple cider vinegar
sugar
mayo

shred the cabbagge, the carrots and the onion. mix two tablespoons of vinegar with one of sugar. Mix everything with mayo, salt and pepper to taste.

You can make a great salad in the same way, but wit raw broccoli, carrots. No onion, it is wonderful,

enjoy

go down to the local produce stand that says "fresh cabbage." go early and get yourself a good-sized head of cabbage. cut it in two - you only need one half for a lot of cole slaw.

peel the leaves off and soak them in cold water for about fifteen minutes. dry them off, them chop them coarsely. (i like mine coarse-chopped, but some people like it chopped finer.)

in another bowl, combine just under a cup of mayonnaise, a tablespoon of sea salt, a tablespoon of sugar, a splash or two of apple cider vinegar, and fresh-ground black pepper to taste.

mix it up, then pour over the cabbage and blend well.

refrigerate for a few hours to let the flavors blend - this is critical. serve cold.
