The Roman Empire consisted of the western part which is the nations of the current European Union, and the eastern part which is the Islamic nations surrounding Israel. Looks like it's all coming together, as predicted.

You are on the right track. However, it is not the Roman Empire in that sense like Pagan Rome with the Caesars it will be Papal Rome that emerged after the Pagan Roman which consisted of the Popes. I invite you to read more about this and you will find understanding that the empire to rise again with power to persecute the saints will be the Catholic Church - Papal Rome, just like in the dark ages when the Popes ruled and killed the saints so shall it be in the time of the end. But they will have a backing from a political power as stated in Revelation 13 as the two beasts one being Papal Rome. Also in Daniel 8 you will the kingdoms that reigned were the Persians and the Greeks and what followed - Pagan Rome which evolved into Papal Rome.
