Instead of a cup of cold water, put 1cup vanilla ice cream

This Taco Bake is easy to make and tastes really good. My friend always brings it to Potlucks and it is gone within 20 min:
Taco Bake
Prep Time: 15 min
Total Time: 35 min
Makes: 6 servings
1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner
1 lb. ground beef
1 pkg. (1-1/4 oz.) TACO BELL HOME ORIGINALS Taco Seasoning Mix
3/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
1-1/2 cups KRAFT Shredded Cheddar Cheese, divided
1 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa
PREHEAT oven to 400°F. Prepare Dinner as directed on package. While Macaroni is cooking, brown meat; drain. Add taco seasoning mix and 3/4 cup water to the meat; simmer 5 minutes.
STIR sour cream into prepared Dinner. Spoon half of the Dinner mixture into 8-inch square baking dish; top with layers of the meat mixture, 1 cup of the cheese and remaining Dinner mixture. Cover.
BAKE 15 minutes. Top with salsa and remaining 1/2 cup cheese. Bake, uncovered, an additional 5 minutes or until cheese is melted.
Jazz It Up
For extra crunch, prepare and bake as directed, topping with 1/2 cup coarsely crushed tortilla chips along with the salsa and cheese.

How about a nice fruit salad. You can make a very simple one with strawberries, oranges and bananas. If there are blueberries or other seasonal berries available, add those too. You don't need any dressing, just cut the fruit in chunks and put into a pretty bowl. If you don't have an attractive bowl, such as glass, line your bowl with leaf lettuce then put the fruit salad in. Ripple edge leaf lettuce will dress up any container, even plastic!

Spinach Dip!
Its super easy all you have to do is go buy a packet of ranch dressing powder and the instructions are in the back!
I also have bought the pre-made artichoke/spinach dip from Costco stick in the oven that morning the you can re-heat it or eat it cold that day!!! It is really good and it looks home made.

Why not just take some nice finger snadwhiches. If you don't like that idea then you could always go to some place like KFC and get a bucket or two of chicken.

"Garbage" and tortilla chips or Frito chips.
Garbage
1 large can chopped black olives
2 chopped tomatoes (or if you like it REALLY hot, add a can of Hot Rotel tomatoes, instead.)
1 small onion, chopped fine
1 small can diced green chili's (Omit if you are using the Rotel)
2 garlic cloves, if desired.
Mix together the night before your potluck. You can also add a small can of corn, if you wish.
