has a unique texture, but flavor like a squash mixed with a mild cucumber. oh, and the name of eggplant was given it by Europeans in the middle of the eighteenth century because the variety they knew had fruits that were the shape and size of goose eggs. That variety also had fruits that are a whitish or yellowish colour rather than the wine purple that is more familiar to us nowadays.

Eggplant is like a sponge, it tastes like what ever you cook it in/with. Fry it in butter, it tastes rich & creamy. Fry it in bacon fat it tastes like pork. Cooked all by itself, I'd compare it to mushrooms.

Well if you ask me:- I love the taste of it particular if you can get the Indian varierty of it. And if you fry it with Indian spices, its a great curry material! So i love it..its squishy and has a unique flavor about it.
If you ask my girl friend:- "Yuckkkk.....Makes me feel heavy and sleepy when I eat it".
