Ok, everyone I know loves this casserole! Everyone, no joke! And I have made it for tons and tons of people! It's easy, easy, easy too! It's one you can really play around with too as far as ingredients.

Chicken Enchalada Casserole
1lb. cooked chicken
1can Cream of Chicken soup
1 16oz tub sour cream
1 can diced green chilis
1 can sliced olives
2 chopped scallions
1 chopped tomato
1 BIG block jack cheese (or colby/jack)
15 or so tortillias
Paprika

Preheat oven to 350
In a med bowl mix soup, sour cream and green chilis.

Put some chicken and cheese in each tortillia and roll. Place them in casserole dish until it is tight.

Pour mixture over totrillias.
Put the rest of the cheese on top of the mixture.
Put olives, scallions and paprika on the cheese.

Bake for 15 minutes.

Put tomatos on the top and cook for an additional five minutes.

This is quick and easy and soooo good!!! I usually cook with a lot of spices. This is the only recipe I do not put any spices in. Sometimes when I cook the chicken I use garlic and onions and olive oil, but it isn't necessary. This is good without aditional spices.



Disappearing Enchiladas

I made this recipe up one day and it is always a big hit...it is also really simple to do!

2 pounds ground beef
2 packages beef chorizo
1 cup Oaxaca cheese, crumbled
1 can of green chiles
1 large can chopped olives
1 cup green onions, chopped, divided
2 cups Mexican cheese blend, divided
1 cup sour cream, divided
Small flour tortillas
1/2 cup half-and-half

In a skillet brown the ground beef and drain; set aside.

Next, thoroughly cook the chorizo in a skillet and drain; set aside.

In a large bowl combine the beef, chorizo, Oaxaca cheese, green chiles, olives, 1/2 cup green onions, 1 cup Mexican cheese blend and 1/2 cup sour cream. stir until all the cheeses are melted.

Butter a 9 x 13-inch glass baking dish. Spoon the mixture into the tortillas, about 3-4 tablespoons for each tortilla. Roll the tortillas into an enchilada shape and place side by side in the dish. When the dish is full, pour the half-and-half over the top of the enchiladas. Bake at 350 degrees F for 30 minutes, then sprinkle the remaining Mexican cheese blend and green onions on top and bake for another 5 minutes. Serve hot.

Makes about 12 - serves 6.

NOTE: If you have extra filling mixture left after filling the tortillas, it can be used as a great dip if served with Fritos

Lasagna, definitely, but with a different twist.
I use grilled eggplant, sliced thinly instead if the noodles. It makes for a lighter, rich taste, I think. I like to marinate the eggplant slices, then grill them on both sides, then add them in layers with the other ingredients. It's great for a low carb diet. Plus, sometimes the noodles taste over cooked and soak up too much moisture from the lasagna and make it pasty.
Also, a nice fresh ricotta makes a huge difference.

My easy recipe ( have a family of four so this is how I measure it)

generously oil a large lasagna pan ( I like olive oil)
3 large eggplants
Italian dressing mix (2 packets)
2 cups water
*slice the eggplant to 1/4 " thick then mix the dressing mix with the 2 c of water, marinate the eggplant slices at LEAST an hour. Overnight seems to taste the best

2 jars of tomato sauce-the mushroom works well
2 packages of italian sausage cooked and crumbled
2 lbs of mozzarela
16 oz ricotta

grill the eggplant slices for 3-4 mintues each side, watch them carefully, roasted and burnt is 30 seconds' difference

then layering ingredients in pan
eggplant, ricotta, sausage, cheese, Sauce-Repeat until pan is full. Save a little cheese for the top and bake at 350 for 45 minutes. If the top starts to brown too much, tent some foil on top.

Let cool for 15 minutes , slice and enjoy!

Mrs. Pauline Squash Casserole

6 to 7 medium squash
2 medium onions cut up
1 pkg grated sharp cheese
1 c milk
1 can cream of mushroom soup
2 eggs
about 10 saltine crackers
salt and pepper to taste

Cook squash and onion in boiling water until tender. Drain water. Mix together squash, onion, milk, soup, eggs, crushed crackers, salt and pepper. Add most of cheese (saveenough to sprinkle on top of mix.Pour into greased casserole dish. Sprinkle with remaining cheese on top. Crush a couple more crackers on top and bake at 350 degrees for about 25 minutes

This is the best Squash casserole I have ever made.

Position half of the carrots, celery and onions within the bottom. Situation the hen (back aspect down) within the gradual cooker. Add last broth, greens, salt and pepper, basil and italian seasonings (if used). Location lid on cooker and prepare dinner on LOW warmth for 7-10 hours or excessive heat for two half of to 3 half hours. Serves 4. NOTES: that is an first-class recipe for humans on the go! Tuna Casserole:

2 cans chunck light tuna in water
1 can of cream of mushroom soup
1/2 16 oz. container of sour cream
1 can of peas
fresh chopped onion
fresh minced garlic (optional)
1 package of rotini pasta
salt and pepper
grated cheese
1 package of ritz crackers

In a small pan, sautee onions and garlic in 1 tblsp olive oil.
At the same time, in a pot cook the pasta and drain when done.
Add soup, sour cream, tuna, and peas to the onions, season with salt and pepper over low heat. Combine with pasta and mix well. Put in casserole dish with grated cheese on top and crushed ritz sprinkled over that.
Heat oven to 350 degrees. Put in casserole for about 10-15 min. or until hot and cheese is melted.
Enjoy!

Company Hash Browns

1 bag frozen shredded hash browns
1 can cream of chicken soup
8 ounces of shredded cheddar cheese
8 ounces of sour cream
3 tablespoons diced onion
1 tsp salt
1/4 tsp pepper

Combine all ingredients in a casserole dish, mix well, top with 1 cup crushed corn flakes, cover bake at 375 1 1/2 hours or until bubbly.

for a complete meal, add cut up ham,hot dogs or sausage

Easy Beef and Potato Casserole

Prep time: 20 mins.
Cooking time: 1 hr. 15 mins.

1 lb. (or so) lean ground beef
1 tbsp. Oil
½ c. (or so) finely chopped onion
½ c. (or so) finely chopped celery (w/ leaves)
1 can condensed cream of mushroom soup
1 c. frozen mixed vegetables, thawed
½ c. milk
1 tsp Worcestershire sauce (optional)
1 tsp pepper
1 1/4 tsp salt
4 large baking potatoes (thinly sliced - I use the food processor)

Break up ground beef. Saute in large skillet over medium heat in oil until browned, 8 to 10 mins. Add onion, celery and celery leaves and saute 5 minutes. Stir in mushroom soup, vegetables, milk, Worcestershire sauce, pepper and 1/4 tsp of the salt.

Place half of the potatoes in a greased 2½ (or larger) quart baking dish. Sprinkle with ½ tsp salt. Spoon half of the ground meat mixture over potatoes. Cover with remaining potatoes and the rest of the salt. Layer the other half of the meat mixture over all. Cover and bake in 400-degree oven for 1 hour or until potatoes are tender when pierced with a fork.

Three Cheese Cavatini

1 lb uncooked rigatoni pasta (or similar shape pasta)
28 ounces spaghetti sauce (or use your own, you may need more if you like it saucy)
8 ounces mushrooms, sliced
1/4 cup chopped onions
3 garlic cloves, minced
2 tablespoons olive oil
1 cup diced pepperoni (or sliced pepperoni)
2 cups low fat cottage cheese
2 cups part-skim ricotta cheese
1 egg
2 cups shredded mozzarella cheese
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh basil
1 teaspoon oregano
1/2 teaspoon nutmeg
salt and pepper

Preheat oven to 350°F.
Cook pasta according to package directions to "al dente".
While pasta is cooking, saute mushrooms, onions and garlic in olive oil until tender, remove from heat to cool, do not drain.
Combine cottage cheese, ricotta, egg, herbs and seasonings.
Mix cooked pasta with sauce and sauteed onion mixture, and spoon half into bottom of 11" x 13" glass pan.
Spoon cheese mixture on top of pasta, spreading evenly to the edges. Put 1/2 cup mozzerella on top of cheese mixture. Place sliced pepperoni on top of cheese, then spread remaining pasta/onion/mushroom mixture, then mozzerella cheese.
Bake for 30-40 mins, until cheese is browning and bubbly. Allow to rest at least 5 mins before cutting.

tuna fish-my mom used to cook this for me-
have a picky man and he loves it! the first night i made it i had to force him to eat it, litterally! now he asks for it once a week.

2 cans of tuna in water.
egg noodles, cooked
1 can of cream of mushroom
i throw in 1/2 can of milk
bake 325-350, for about 20-30 min (until it kinda crusts on top) stir if you want and top with shredded cheddar and bake for 10 min more. i have put lays regular potato chips broken up into pieces on top too. it sounds gross but hey, its only a few bucks to try it!

brown ground beef... drain any fat... add onions...cook bout 3-5 min add mushrooms cook 5 min more... add soup an milk..sitr well add salt an pepper... add noodles an sour cream mix well put in baking pan top with chives bake at 350 fer bout35 min til hot an bubblie.... serve with tossed salad an yur fav fruit pie...
