God answered that in Genesis 2:18, when He said "It is not good for man to be alone."
Had Adam remained "alone", he would have been self-suffice, and self-centered with only himself to depend on and care for. By separate man into two parts (male and female), God gave him the gift of love. He had someone to be a "helpmeet" for him, to care for, encourage and support him when he needed it. But also some whose needs he could meet in the same way.
It was not until after the fall that the need to procreate came about. So Eve was there as more than just a "bedmate". (Although I'm glad wives get to be that too!)

Humans are social creatures. We crave company for psychological, as well as practical, reasons. Helpmates. Companionship. Someone off of which to bounce ideas. Also, assuming the mythological Adam and Eve were built the same way real humans are, procreation would have been impossible without both genders.

Ok, I personally don't believe the Genesis account of creation, but this is my theory anyway:
Adam was alone and it sucked.
God decided he needed a friend.
The only beings in creation that looked human/godlike at the time were male.
It was time to try something else.
:-)
I myself have felt the pain of being a single Eve, so maybe Adam just needed companionship. Or extra help in the garden. I think the Bible said something about helpmates.

God noticed that all of the animals in the Garden of Eden had mates, so he created a mate for Adam by removing one of his ribs and forming Eve. Every living thing deserves a mate; a companion.

For the same reasons I need my husband, and my husband needs me. We complete each other, we challenge each other to become better, and together we have the ability to have a family and learn through the ultimate lesson called "parenthood." Honestly, I don't think either of us would have a shot at eternal life without the other one. It's a beautiful thing.
