kids have soccer practice tonight at 6pm.. low on food, any ideas on quick meals to feed kids for dinner? thanks

Take a pie pan and cover it with tin foil spray it down with a cooking oil and put chicken flays in it. Cover the chicken with a marinade or a spice rub and spray them down with oil then flip them and do the same thing. Then PREHEAT you oven to broil(500) and put the chicken in for 8-10 min on one side and then 10min on the other. While that is cooking throw a bag of veggies into a pot and cook it until warm but still crisp. In all it should take about 30min from start to finish. You could also put potato's in the microwave.
Warning if you are going to use a marinade then don't worry about the oil but make sure that you use the tin foil. Clean up takes about 2min. Just take the foil off and throw it away and you are done.

My favourite for this is quesadillas. I keep a can of fat free refried beans in the cabinets at all times. Corn tortillas and preshredded mozzarella are always in my fridge. Here's my SECRET RECIPE.. :D

You'll need 2 corn tortillas for each quesadilla. Most kids need 2 quesadillas, so plan on 4 tortillas per kid. Spray lightly on one side with nonstick cooking spray. Spread the beans like peanut butter on one tortilla. Sprinkle with a little cheese, then a little pepper and a little ground cumin or garlic salt if you have em. Top with the other tortilla to make a "sandwich." Bake for 7-10 minutes at 400. VERY nutrtitious and filling!

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Whatever ingrediens you have, pop it all on your bread base, and hey-presto ... you got a pizza ! Remember to put lots of tomato paste ... kids love tomato sauce ..
