First of all do NOT use canned speghetti sauce...Yuck.
Lasagna is easy and all about the way YOU like it. You'll need a box of lasagana noodles, 2 bags of shredded mozzarella, one egg, a carton of cottage cheese, hamburger, ground sausage, tomato sauce, tomato paste.
I make my own sauce. I put 2 cans of tom. sauce and 4 small cans of paste into a big pot. Mix together well. I add the spices we prefer....garlic salt, onion poweder, parmasean cheese and sugar. The sugar will help cut down the acidity of the tomatoes and that is about personal preference.
In the mean time take a skillet and coat with a couple of turns of olive oil, put a couple of curshed gloves of garlic in this and begin to heat. Crumble the raw hamburger and ground sausage into this and cook. When the burger mix is done, drain well and add to the sauce.
Keep tasting the sauce and adding your spices and sugar until it taste how you want. If it seems to watery, add more paste. If its too thick for you, add some water.
All the while you are doing the above you should be boiling a very large covered pot of water. When it is boiling and your sauce is how you want it and simmering, add your noodles, give them a couple of stirs and do not cook them past the al dente stage. When they are done, drain.
In a 9x13 pan, or larger put a layer of sauce on the bottom (this prevents the bottom layer of noodles from sticking. Layer noddles, sauce, a layer of cottage cheese and egg mixture and mozzarella and continue layering to the top, end with the mozzarella. Bake in a 350 degree oven for 45 minutes, cover for the first half of cooking time then uncover and turn your pan 1/2 way around, when it's done take out and loosely cover and let sit for at least 15 minutes before you cut into it.

Easy Cheesy Lasagna
6 servings
1 jar (28 oz) spaghetti sauce
6 uncooked lasagna noodles
1 15oz container of fat free ricotta cheese
1-2 cups chopped mushrooms
8oz shredded low-fat mozzarella cheese
Preheat over to 375.
Spray an 11x7 dish with cooking spray. Spread 1/3 of the sauce on the bottom of the dish.
Arrange 3 noodles in a single layer over the sauce. Top with another 1/3 of the sauce, all of the ricotta cheese, the vegetables, and 1/2 of the mozzarella cheese. Lay the next 3 noodles on top. Spread the remaining sauce over the noodles.
Cover the dish tightly with foil. Bake about 1 hour or until noodles are tender.
Take the foil off. Sprinkle with remaining mozzarella cheese, and bake uncovered for 5 minutes longer. Let stand 5 minutes before cutting.

I have no recipe but this is how I make it. I boil lasagna noodles as directed about 8 of them. I will take a jar of spaghetti sauce and doctor it up(usually Prego with meat and mushrooms) with garlic and basil and Italian seasons pretty much anything I can get my hands on. Then while that is cooking I make a cheese mixture (usually one egg, 16 oz of Kraft shredded cheese (the kind that has multiple cheeses)16 oz of Ricotta cheese, 16 oz of cottage cheese and sometimes I add about 1/4 c. Parmesan cheese) Once all is ready in a glass baking dish I spray it with some Pam spray. Add a little sauce mixture just enough to lightly cover bottom of dish then 1/2 the noodles, 1/2 the cheese mixture 1/2 the sauce mixture and repeat topping with a nice layer of cheese and bake at 350 until it's nice and brown and the cheese is bubbling.

Hi...one tip I would recommend is to use the no boil noodles. I buy the barilla no boil lasagna and it cooks up "pillowy" every time. You can either make sauce or buy a jar but if you go the jar route remember you get what you pay for. I would go for a high quality sauce. I always make my own.....I always mix my carton of ricotta with an egg, some chopped parsley for color and some grated parmesan.
I grease my baker and ladle in a thin layer of sauce. Then it's noodles, ricotta, shredded mozzerella and more sauce. I repeat til I am out of ingredients. Bake about 350 degrees for at least 45 minutes. I like mine bubbling.....good luck.

I heartily recommend the recipe in "The Joy of Cooking" (an excellent investment for anyone wanting to learn how to cook), with a few caveats:
1.) The JoC is notoriously wimpy when it comes to spicing its dishes; double the amount of all spices (except salt) and triple the amount of garlic.
2.) Instead of just 1/4 pound of ground pork and 1 lb. of hamburger, I usually use 1/2 lb. of hamburger and 1 package of sweet Italian sausage.
3.) If you follow the recipe exactly, the lasagne tends to come out a little too soupy; reduce the amount of beef broth and olive oil used from 1/2 cup to about 3/8 cup.
4.) Since it takes about 2 to 2 1/2 hours to make from start to finish (since you're making the sauce from scratch), I recommend preparing a double batch; bake one pan, and freeze the other -- it keeps remarkably well.
I always make this lasagne recipe when we have company over for dinner; and I have YET to have any leftovers to package up at the end of the evening!
Bon appetit!

This is one of my favorites:
1 1/2 pounds lean ground beef
1 onion, chopped
2 cloves garlic, minced
1 tablespoon chopped fresh basil
1 teaspoon dried oregano
2 tablespoons brown sugar
1 1/2 teaspoons salt
1 (29 ounce) can diced tomatoes
2 (6 ounce) cans tomato paste
12 dry lasagna noodles
2 eggs, beaten
1 pint part-skim ricotta cheese
1/2 cup grated Parmesan cheese
2 tablespoons dried parsley
1 teaspoon salt
1 pound mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese
--------------------------------------------------------------------------------
DIRECTIONS:
In a skillet over medium heat, brown ground beef, onion and garlic; drain fat. Mix in basil, oregano, brown sugar, 1 1/2 teaspoons salt, diced tomatoes and tomato paste. Simmer for 30 to 45 minutes, stirring occasionally.
Preheat oven to 375 degrees F (190 degrees C). Bring a large pot of lightly salted water to a boil. Add lasagna noodles, and cook for 5 to 8 minutes, or until al dente; drain. Lay noodles flat on towels, and blot dry.
In a medium bowl, mix together eggs, ricotta, Parmesan cheese, parsley and 1 teaspoon salt.
Layer 1/3 of the lasagna noodles in the bottom of a 9x13 inch baking dish. Cover noodles with 1/2 ricotta mixture, 1/2 of the mozzarella cheese and 1/3 of the sauce. Repeat. Top with remaining noodles and sauce. Sprinkle additional Parmesan cheese over the top.
Bake in the preheated oven 30 minutes. Let stand 10 minutes before serving.

Easy Lasagna
8 ounces lasagna noodles
1 pound lean ground beef
1/2 cup chopped onion
8 ounces mushrooms, optional
1 jar (about 16 ounces) spaghetti sauce, your favorite
1 teaspoon garlic powder
1/2 teaspoon salt
1 teaspoon dried leaf oregano, crumbled
1/2 teaspoon dried leaf basil, crumbled
1 1/2 cups ricotta cheese
2 cups shredded Monterey Jack cheese
3/4 cup grated Parmesan cheese
Cook lasagna noodles according to package directions; drain and set aside. In a large skillet, brown beef, onion, and mushrooms; drain well. Stir in spaghetti sauce, garlic powder, salt, oregano, and basil. In a 2-quart buttered baking dish (about 11x7x2-inches), layer 1/3 of the lasagna noodles, 1/3 of the sauce and 1/3 of the ricotta cheese, Monterey Jack cheese, and Parmesan cheeses. Repeat layers twice. Bake lasagna for 30 minutes, or until thoroughly heated and bubbly. Let stand for 8 to 10 minutes before cutting and serving. Serves 6 to 8.
or (this is my mom's recipe)
MOM'S LASAGNA
1 pkg. lasagna noodles
hamb. (how much is depending on how large of lasagna)
Spaghetti Sauce (1 jar)
garlic powder, oregano & pepper
1 can tomato paste
1 pkg. dry cottage cheese
1 pkg. chopped (frozen) spinach
1 egg
grated parmesan cheese
1-2 pkg. of Kraft 3 cheese (grated) Italian
Extra: onion, green pepper, and mushrooms
-Cook hamb. and spices, when cooked you can add the extra ingredients (if you want), then add the spaghetti sauce and tomato paste. Set aside...
-while this is cooking, cook the noodles...
-Defrost spinach and add to the dry cottage cheese and then add the egg, Mix well, Set aside...
-Now assemble your lasagna...
-put down a little bit of the hamb. mix just enough to coat the bottom of the pan, so the noodles don't stick.
-then add one layer of noodles followed by a layer of hamb. mixture, then a sprinkle of parm. cheese, and a few handfuls of the 3 cheese mixture, then followed by a layer of Cottage cheese/spinach mixture, then noodles then just continue until you run out of ingredients or you fill your container which ever comes first. the last layer should be noodles with a small amount of hamb. mixture on top so the noodles don't burn. Cook at 325 for about 1-2 hrs, add cheese to the top when just about done.

here's a recipe that I use and its real simple:
Ground beef (around 4 lbs)
2 cans spagetti sauce (whichever flavor you like)
4 cups of Mozzeralla Cheese (or 2 bags shredded)
Lasagna noodles
Brown ground beef, drain, mix in both cans of sauce. While meat is cooking, boil your noodles until tender. (Note: I add extra garlic powder to my meat mixture while its cooking). In a 9x13 dish, layer first noodles (3) long ways then spread half of meat mixture and top that with one bag of cheese then add another layer of noodles, meat and cheese and put in 400 degree oven until cheese slightly browns and let set for about 15 minutes before cutting. Serve with cheese garlic bread and its sooooo goooood.
