I could just replenish the lost vitamins with supplements and I should be okay right? Anyone have any idea what these vitamins might be? Thanks!

B12 for one.
Proteins are also essential and the only way to balance the equation to add those 22 essential amino acids(protein), is combining legumes (lentills, chick peas, soy, beans) OR nuts AND grains(rice, bread, bulghur) . so its either nuts and grains or beans and grains...
If you want to cut out much grains (bread) then you will have to eat a bit of fish or chickes, or low fat cottage cheese,non fat milk or yogurt....

You must eat from the 4 food groups and exercise, exercise,exercise...

Chicken eat well cooked chicken with no oil or any of that stuff, chicke is the best think you can eat for protein, and you eating just fruit and veggies is not good for you. veggies with chicken is what I eat three times a week and I get my proteing and have healthy food. But don't give up food like that, Are you becoming a vegeterian or are you loosing weight. The best way to loose weight is with proteins and six meals a day. it works believe me. I know I done it.

you wouldnt be losing any vitamins..raw fruit and veggies are the best source of vitamins. you will be loosing out on different minerals though if you only eat fruit and veggies. If you are concerned try the 'swisse' brand of multivitamins..you take one a day and they provide all the vitamins and minerals you need for the day!

As long as you eat a wide variety of fruits and vegetables you would be ok on vitamins. You would be shorting yourself on protein for sure. Most significant plant protein sources like beans need to be cooked to be digested.

It's good to take vitamins. However, the optimal vitamin is liquid and derived only from whole foods. In other words: no synthetics.

Remember, whole food vitamins means: NO MAN MADE SYNTHETICS. IT IS ALL TAKEN FROM NATURE ONLY. Look for the liquid multivitamins.

Protein, yes, and iron, unless you are sure to eat a heafty load of greens like spinach and kale.

You will lose protein. You can get the protein in salads by adding sunflower seeds, etc.
