Can he change his mind? I mean, he has made all these predicitions or revelations about what will happen (despite human free will), but what if he changes his mind? And, if he/she/it could change his/her mind, why would he/she?

The question is if She did change Her mind, how would you know? If God is omnipotent, then yes, She can change Her mind. But, since we are exposed only to the results of Her reactions and not to the reactions itself, there's no way to say if something was planned or improvised on the spot. That's why faith is a personal affair: to handle these questions we can not answer ourselves with reason.

I have faith that if God do improvises and changes Her mind, it is because She is working in my and humanity's best interest. My faith in a benevolent God is the only thing that allows me to sleep at night.

Sooner or later, someone will point out that God changes his mind plenty of times in the Bible, which really causes some difficulty for people who assert that he never changes. It requires a roundabout theological explanation.

Personally, I don't think it's strictly correct to apply terms like "free will" and "mind" to God. Those are human terms; I'm always hesitant to ascribe human characteristics to God. It's embarrassingly devout of me, but I prefer apophatic descriptions of God if I must hear them at all.

No, He cannot change His mind. He cannot lie. He is an unchanging God. It is us that need to adapt.
