The flesh of the sheep is called:-
A one year old sheep is called a Hogget.
A two year old sheep is called a Two-tooth.
A fully grown sheep is Mutton.

I believe the cuts of meat from the Two-tooth are the best.
Although Mutton is from a fully grown sheep and is tougher, it can be tenderised by slow cooking and is very tasty.
It is also cheaper.
