I nice seafood banquet that way you'll hardly have to cook it with cold cooked potatoes dressed in mayo sprinkled with bacon baby spinach and spring onions and for dessert fresh strawberries dipped in melted chocolate with the leaves removed only the stem intact.

Generally, there are a lot more questions than that... what she likes, whether she's a vegetarian or not, and your own personal level of skill in the kitchen. Though I could post an epic-length reply, I won't. The best resource I can point you to for this is an excellent book called "Win Her with Dinner". It's got a great sense of humor, a large number of good, impressive, yet deceptively simple recipes, and will even go through selecting wine, music, and dessert. Definitely a must-read.

Things that I have cooked that have, at one time or another, impressed women:
(1) Homemade ravioli stuffed with spinach, ricotta, and roasted red bell peppers, topped with a crimini mushroom sauce.
(2) French bread. It always seems to impress people that I can bake proper bread from scratch.
(3) Chicken marsala. It's easy to make and delicious, provided that you can get ahold of some decent marsala wine.
(4) Coq au vin. Also easy and delicious.
(5) Fusion sushi. We made sushi together; it was lots of fun. I got a bunch of ingredients together like roasted portobella mushrooms, cucumbers, salmon, cucumber, avocado -- just tons of stuff, anything I could think of. The hardest part, believe it or not, is making the rice.
(6) Crepes with fresh blackberries and creme anglais. So simple, but so good.
(7) Crepes suzette. Time-consuming and difficult to do properly, but the payoff is that you light them on fire. For maximum impressiveness, make sure that her hair is well out of the way. :-)

First, in one of your conversation(s)ask her what she likes and take it from there.Second, set the mood...red tablecloth, roses, wine(very important), little light, don't rush to serve and be cool.enjoy the moment. Never forget desert(something with chocolate) if she likes chocolate.
Third, be a good listener(don't talk so much about you, or about previous relationships), be a gentleman, and try not to talk when your mouth is full. Be the "servant" and throw some good humor while you serve. again, enjoy the moment. women love guy/girl with a sense of humor
finally, remember that whatever you would do or cook for that especial person should be something that should impress her/him. Like they say "the thought is what it counts" something like that.
In addition, the best way and I think the most important thing to impress some one is being yourself. yeah as simple as that...never "pretend" to be something you are not. Be you!! that is impressive. if none of these things work, that person is either too cold or she/he is not interested. But there is plenty of of fish in the sea. Welll, I am a girl and I would really like to have crystalised flowers to eat. These would look really pretty, before a meal or after as a little surprise.
I am the good home cooked menu. It depends on the weather. Colourful tossed salads, with apple unpeeled, don't use beetroot with a tossed salad the colour goes all over, messy.
If you want her to know you and that is what it is all about then provide what you really really like. Togetherness is sharing the same stuff. Happy romantic eating

Roast duck with orange sauce accompanied by wild rice, a salad of baby greens and your favorite green vegetable. Don't forget the killer chocolate dessert, even if you buy it already prepared. The wine to serve with duck should be a nice full bodied red, perhaps a Merlot. For duck recipe consult the book "Joy of Cooking", if you don't already have it buy it no one should be without it if you like to cook.

Never try anything that is the best or else you may end up cooking for her for a lifetime,
Never try anything Bad or else you may loose her for a lifetime.
So always try that she likes and satisfies her hunger, but nothing extravagant, so she will know that okay you can share things.
My best guess is PASTA's along with White wine.

Pineapple-Banana Coffee Cake
Aloha! Your taste buds will welcome this tropical delight of banana coffee cake loaded with pineapple and topped with a pineapple glaze.
1 package Betty Crocker® banana quick bread mix
3/4 cup water
3 tablespoons vegetable oil
2 eggs
1 can (8 ounces) crushed pineapple, drained and liquid reserved
1/4 cup flaked or shredded coconut
Pineapple Glaze (See Below)
2 tablespoons flaked or shredded coconut, if desired
1 . Heat oven to 350ºF. Grease bottom only of square of pan, 8x8x2 or 9x9x2 inches. Stir quick bread mix, water, oil and eggs in medium bowl until well blended (batter may be slightly lumpy). Gently stir in 1/3 cup of the pineapple and 1/4 cup coconut. Spread in pan.
2 . Bake 8-inch pan 35 to 40 minutes, 9-inch pan 25 to 30 minutes, or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
3 . Spread with Pineapple Glaze. Sprinkle with 2 tablespoons coconut.

1 cup powdered sugar
Remaining drained crushed pineapple (1/4 cup)
1 tablespoon liquid reserved from crushed pineapple
1 tablespoon butter or margarine, melted

I would have to say some kind of pasta... Everyone loves pasta, and it's pretty hard to mess up. Just make sure that the noodles aren't too hard or too soft; taste test. :) And I recommend trying it once on your own before making it for her.
