So they don't taste so fishy. The same reason why lemon-scented bathroom fresheners are the best - it masks nearly any nasty odor.

some fish taste well...fishy....the lemon helps cut back the fish oils and improves the taste.

Lemon juice on its own will "cook" a fish...so some people add that as a way to ensure that the fish is fresh without being overcooked. Lightly cook the fish and add lemon so it continues to cook while it's being served...

The original purpose for serving lemon w/ fish was to remove the odor from your hands.Evidently somewhere along the way it was percieved as part of the dish.

I don't know if there is a scientific reason, I use it because it tastes so good.
But, I have read that you can actually "cook" fish, by soaking raw fish in lemon juice, I guess an acid reaction......
