I am hungry and its the only thing I have thawed out.

Stuffed Cornish Hens

1 package long-grain and wild rice mix, 6 ounces
3/4 cup chopped dried apricots
1/2 cup chopped celery
1 can (about 4 ounces) chopped mushrooms, drained
1/4 cup melted butter
1 tablespoon soy sauce
4 Cornish game hens (approximately 1 pound each)
PREPARATION:
Directions for stuffed Cornish hens
Cook rice according to package directions; cool. Add celery, chopped mushrooms, chopped apricots, butter, and soy sauce; toss lightly to mix. Stuff hens; place in roasting pan.
Roast, loosely covered at 375° for 30 minutes. Remove cover and continue roasting Cornish hens for about 60 minutes, or until done. Baste Cornish hens with butter during last 30 minutes, if desired.

SPICED GRILLED CORNISH HEN
2 tablespoons unsalted butter
1 tablespoon honey
2 teaspoons chili powder
1/4 teaspoon cayenne
1 teaspoon fresh orange juice
a 1 1/4-pound Cornish hen, halved lengthwise (available by request from butcher)

Prepare grill.

In a small saucepan melt butter with honey, chili powder, and cayenne. Remove pan from heat and stir in juice and salt and pepper to taste.

Rinse and pat hen halves dry and season with salt. Grill hen halves, skin sides down, on an oiled rack set 5 to 6 inches over glowing coals 5 minutes. Turn halves over with metal tongs and grill, basting with spice mixture, 20 minutes more. Grill halves, without basting, until cooked through, about 10 minutes more. (Alternatively, grill hen halves in an oiled, hot, well-seasoned ridged grill pan over moderately high heat.)

Serves 2.

I love cornish hen. I would suggest some stuff to keep it moist. Just baked it in the oven. I don't see any reason you couldn't deep fry it...

Look up a recipe on the net for an oyster stuffing and stuff the little guys. Side dishes are a plenty! Anything would go with this.

roast/bake just like a chicken
sprinkle a bit of garlic & onion powder, salt, pepper, paprika
could also put some fresh spices inside hen like rosemary

Mix butter with your favorite seasonings. Then, use your finger and separate the skin from the meat. Push some butter up there, as far as you can get it. Then, butter up the outside as well. Bake it until it's done. Easy and tasty.
