How fancy do you want to get? Baked or Boil a potato until it is cooked, soft and pliable. AT this stage you could simply drop on a dollop of butter and salt & pepper to taste and MASH it up with a fork, you can also add bacon bits and chives / green onions. If you want fancy, you'll peel potatoes, boil them to a spongey mess, add a half cup of milk, a dollop of butter and salt & pepper to taste, and Whip your potatoes until they are creamy smooth. 3. Put the potatoes in bowl then put bowl in boling water to steam them
4. Poke the potatoes lightly to check whether they have turned soft
5. Take out potatoes when soft

Peel and cut up suitable potatoes (not the waxy sort), boil until soft (probably about 15 mins), drain off the water, add a little milk and butter, mash with a fork (or ideally a potato masher), keep going until it's smooth - longer than you think (add more milk/butter if it seems too stiff). Ingredients:
4 to 6 potatoes
1 tsp. salt
1/3 to 1/2 c. milk
2 to 4 tbsp. butter

Steps:
1. Peel and boil 4 to 6 medium-size potatoes for 20 to 25 minutes or until tender when pierced with the tip of a knife. (Images 1 to 2)
2. Drain potatoes in a colander, return them to the pot they were boiled in and shake over medium heat until the potato pieces are dry and mealy.
3. Puree potatoes by passing them through a food mill or potato ricer, by whipping them with an electric mixer, or by mashing them with a potato masher or heavy fork. Work out lumps as best as you can. (Image 3)
4. Whisk in 2 to 4 tbsp. melted butter, a pinch of salt, pepper to taste and 1/3 to 1/2 c. warmed milk. Whisk potatoes to desired smoothness. (Image 4)
5. Serve immediately.

Once boiled and mashed, I first add a raw (whole) egg, then margerine / butter and if need be a little milk. Season to taste. The raw egg idea sounds gross, but gives the mash a VERY nice flavour (and I think it pretty much cooks from the heat of the potatoes - my theory, so I'm sticking to it!) Chinese salt (?) (monosodium glutemate) also makes it yummy!!!

GARLIC MASHED POTATOES WITH CHIVES
This delicious variation on a side-dish classic is made with red potatoes and flavored with a full head of roasted garlic.
1 head of garlic
1 tablespoon olive oil
2 1/2 pounds red-skinned potatoes, peeled, cut into 1-inch pieces
1/2 cup whipping cream
1/4 cup (1/2 stick) butter
2 tablespoons sour cream
1/4 cup chopped fresh chives
Preheat oven to 425°F. Cut top 1/4 inch off head of garlic to expose tops of cloves. Place in small baking dish. Spoon oil over; sprinkle with salt and pepper. Cover dish tightly with aluminum foil. Bake until garlic cloves are tender, about 45 minutes. Squeeze garlic cloves from skins and mash in small bowl.
Cook potatoes in heavy large pot of boiling salted water until very tender, about 18 minutes. Drain; return to pot. Stir over low heat to allow excess water to evaporate. Add whipping cream, butter, sour cream, and roasted garlic and mash together. Season to taste with salt and pepper. Stir in chives and serve.
Makes 6 servings.
