Well, first off, I'd like to point out that it's been over a decade since most Americans have used this phrase.
"Tripping" aside from falling down, means being stoned, beig high, hallucinating... Someone who is tripping is under the influence of mind-altering substances... or is acting like it because they are crazy, or stupid.
"Ain't" as you hopefully already know is a gramattically incorrect contraction, meaning "am not."
Therefore people who say "I Aint tripping" mean that they have their heads on straight, and know what they are talking about. They're serious.

Trippin' is slang for getting excited in a bad way, or taking something badly, or just plain becoming angry. It is also slang for when someone is acting crazy, or retarded, or in a bizarre way. It leads to a lot of vagueness. So when you hear "I ain't trippin' ", the person is trying to tell you "I'm not getting angry or taking this the wrong way."
