Breeders that are selling female quail only actually wait until they can identify which sex the bird is after hatching and then cull all the males.
Sexing in the egg is impossible with out taking a DNA sample and doing the correct tests. This can only be done in the laboratory.

i doubt eggs have sexes. wait for it to hatch and apparently sexing birds is quite an involved process so wait and see if it has eggs. if it does it is female.

I would assume one couldn't know without some kind of instrusive test, which might not be so good for the chick. But I would be interested to hear otherwise!
