That isn't true. You CAN get food poisoning from bacon and other "dried" food. Leave a piece of bacon, and even that sealed cured meat out unsealed, and bacteria will grow on it. After awhile mold will start to grow.
That's why bacon needs refrigeration and has an expiration date.
