Soon I am going to start homeschooling my three year old cousin what should I start to teach her first? I want to get her ready for preschool next year.

ABC's, basic colors, basic words consisting of three and four letters, basic knowledge of numbers, knowledge of things in her environment...language skills.

Also coloring. This helps develop small motor skills which she will use in learning to write.
Teach her to memorize her name, her phone number, her address, her parents names. These are basic safety skills.

Teach her about safety in the home and at the playground.

Make it FUN!

I home schooled both my 4 and 5 yr old children. Try first teaching her alphabets. You should then try alpha flash cards also flash cards with numbers. Before the flash cards you want to make sure she knows her alphabets so once you began to use the flash cards you can help her identify the letter and/or number.

alphabet, numbers, addition & subtraction of 1 digit numbers, basic spelling, how to read words, count, proper behavior, how to get along with people, names of the things around her, colors, cioloring, drawing, using scissors and glue, writing her name, parents'/siblings' names, telephone number, address, and especially, how to talk properly

I would concentrate on learning to count to ten, the alphabet, colors, and shapes. If she does well with that, then perhaps teach her to read.
