Ingredients for Rice Pudding
½ cup rice
3 cups milk
¾ cup sugar
¼ cup vegetable shortening
3 eggs
Powdered cinnamon to taste
¼ cup seeded raisins
½ teaspoon salt
Instructions
Wash rice and steam it in milk until thick, then allow to cool.
Cream vegetable shortening and sugar, add well beaten eggs, raisins, salt, rice, and cinnamon.
Grease pudding dish with vegetable shortening, pour in mixture and bake one hour in moderate oven.
Caramel Rice Pudding
Ingredients for Caramel Rice Pudding
1/3 cup rice
½ teaspoon lemon extract
3 eggs
2 tablespoons vegetable shortening
¼ teaspoon salt
2 cups milk
¼ cup sultana raisins
2 tablespoons powdered sugar
¼ cup granulated sugar
Instructions
Melt granulated sugar in small saucepan and cook until brown, but do not burn; pour it while hot into pudding mold and spread it all over inside.
Wash rice, parboil, drain, and cook slowly in milk thirty minutes; turn into basin, add powdered sugar, vegetable shortening, salt, raisins, extract, and eggs well beaten and pour into prepared mold.
Set mold in pan of boiling water and bake in oven till quite set.
Turn out and serve hot or cold.

RICE PUDDING WITH LEMON SAUCE
LEMON SAUCE:
1/2 c. sugar
1 egg, separated
Juice of 1 lemon
PUDDING:
2 eggs, separated
1 c. milk
1/2 c. sugar or to taste
1 lemon, grated rind
2 c. cooked white rice (1 c. raw white rice equals 2 c. cooked)
Mix by hand: rice, sugar, milk and grated rind of 1 lemon with slightly beaten egg yolks. Beat egg whites until stiff and fold into rice mixture. Grease lightly medium casserole. Pour in pudding mix and sprinkle top with cinnamon. Bake 30 minutes at 350 degrees. In small saucepan, combine lemon juice, sugar and egg. Bring to a boil. Take from heat and whip egg white until stiff. Fold into lemon sauce, put back on low heat to cook egg whites until thickened, being careful not to burn sauce (about 1-2 minutes). We always double the sauce recipe because it's so good. Also can be used for bread pudding.

Rice Pudding

Beat eggs, slowly add sugar. Add milk, rice and butter. Sprinkle with nutmeg. Bake at 350 degrees for 1 hour.

RICE PUDDING
Active time: 1 hr Start to finish: 2 1/2 hr
1/3 cup basmati rice
2 cups cold water
1 1/2 tablespoons clarified butter (see cooks' note, below)
2 tablespoons golden raisins
1 tablespoon roasted cashews, chopped
1 tablespoon sliced blanched almonds
5 1/2 cups milk
6 saffron threads
1/2 cup sugar
1/8 teaspoon ground cardamom
Rinse rice well in a large sieve under cold running water, then transfer to a bowl. Add 2 cups cold water and let stand for 1 hour. Drain rice.
Heat clarified butter in a small skillet over moderate heat until hot but not smoking, then cook raisins and nuts, stirring, until golden, about 2 minutes.
Bring milk to a simmer in a 3- to 4-quart heavy saucepan over moderate heat. Transfer 2 tablespoons milk to a cup, then add saffron and let stand. Add rice to remaining simmering milk and cook, stirring frequently, until rice is tender, about 10 minutes. Add sugar and simmer, stirring frequently, until mixture is thickened to a loose pudding consistency, about 35 minutes more. Stir in raisin-nut mixture, saffron milk, and cardamom and simmer 2 minutes more. Serve warm.
Cooks' notes:
• Pudding thickens as it cools. If necessary, thin with additional milk or cream.
• To make 1 1/2 tablespoons clarified butter, cut 3 tablespoons unsalted butter into 1-inch pieces and melt in a very small saucepan over low heat. Remove pan from heat and let butter stand 3 minutes. Skim froth and slowly pour butter into a measuring cup, leaving milky solids in bottom of pan (discard milky solids).
Makes 4 servings.
