The signals might interfere with the avionic equipment like the VOR and stuff. Although avionic equipment today is so technologically advanced and can't be interfered by a cell phone, the airlines ask you to turn off your phone just as a precaution.
They actually did a test on this on the show mythbusters, where they used a phone right in the cockpit next to the avionics equipment, and nothing happened to the avionics.

There is nothing wrong with using your mobile phone on a plane. Its just a gimmick by the airline companies! I have seen on my travels in China where there were passengers using mobile phones while the plane was in the air and believe me the airplane did not crash due to the tranmission signals interferring with the cockpit controls etc.

The scientific answer? So not the answer that points out there is no real technical reason (despite all of the urban myths), but instead highlights the fact that it would be intensely irritating to be stuck on a flight next to the person making the calls?!

Cellphones use electromagnetic waves to transmitt the data to the cel phone tower. These waves may induce signals in the wiring of the aircraft or in the units that control various aspects of the aircraft . This may lead to incorrect data being sent to the computers and displays, which could cause the aircraft to crash.

It actually has nothing to do with the mechanics of the plane. When you are in an area using your cell phone it dedicates a tower to provide your signal. when you are travelling several hundred miles an hour it has to switch from tower to tower to tower so it overloads the phone company.

The radio signal from your phone could bump into the radio signal for the planes radio or navigation equipment. Worse case, this could cause the plane to crash.

Because of frequency management by the FCC, the cell phone doesn't use the same frequencies used for communication or navigation of the aircraft, so it has very, very little, if any, effect.
However, people who use cell phones when right next to someone else are very annoying, so I LIKE IT!
