This includes Hawaii and Alaska. I'd like something easy to make and authentic from the area. any ideas?

Hello this is served at pretty much any American Indian pow wow- use whatever kind of beans you have available. recipes vary- just google it. Always a hit at a party!


Title: INDIAN TACOS
Categories: Main dish, Vegetables
Yield: 6 servings

1 1/2 c Dried anasazi beans
6 ea Pieces Indian Frybread,
-- about 6" in diameter
1 1/2 c Mache or arugula, washed &
-- stemmed
1 lg Red ripe tomato, sliced
2 ea Ripe avocados, halved &
-- sliced
1 ea Red onion, thinly sliced
1 ea Bunch red radishes, sliced
24 ea Golden yellow plum tomatoes,
-- halved
6 ea Green anaheim chiles
1 lg Red bell pepper, or red
-- anaheim chile

To prepare the anasazi beans, soak overnight in water to cover. The
next day, drain the beans and place them in a saucepan with fresh
water to cover. Bring to a boil, reduce the heat, and let the beans
simmer until the skins break, about 3 hours. It may be necessary to
add water as the beans cook to prevent them from burning and
sticking. After the beans are cooked, remove from the heat and set
aside. You should have about 3 cups cooked beans.
While the beans are cooking, roast, seed, and devein the chiles and
the pepper. Leave chiles whole; slice pepper lengthwise into six
strips.
To start building the tacos, place 1/2 cup cooked beans on each piece
of frybread. Add 1/4 cup greens per taco, followed by a red tomato
slice. Add 4 slices avocado and 1 slice red onion, separated into
rings. Follow with radishes and 4 golden yellow plum tomatoes per
taco, and top with 1 roasted green chile and 2 slices roasted red
pepper or chile. You can vary the toppings and the order in which the
taco is built.


here's an easy recipe if you like sweets~:
Kraft Fantasy Fudge

3 cups sugar

3/4 cup butter

1 can (5 oz.) evaporated milk

1 pkg. (12 oz.) semisweet chocolate pieces (or milk chocolate or white chocolate)

1 jar (7 oz.) marshmallow creme

1 cup chopped nuts

1 tsp. vanilla

Combine sugar, margarine and milk in heavy 2 to 3-quart saucepan. Bring to a full rolling boil, stirring constantly. Continue boiling 5 minutes over medium heat or until candy thermometer reaches 234° F., stirring constantly to prevent scorching. Remove from heat.

Stir in chocolate pieces until melted. Add marshmallow creme, nuts and vanilla. Beat until well blended. Pour into a greased 13-by-9-inch pan.

Cool at room temperature. Cut into squares.

Makes 3 pounds.

1) Visit the area and knock on people's doors and ask what they are making for dinner tonight.
2) Search yahoo.com for recipe, you'll find lots of sites with...recipes.
3) Buy a cookbook that covers the western US.
4) Cook some beans.

If you're interested in a recipe from Hawai`i you can always try Kalua Pork. It's typically roasted in an imu (underground oven), but there are many recipes for conventional ovens. I make my kalua pork as follows:

- 3-4 lbs pork butt
- 1/4 Hawaiian Salt (you can use kosher salt if Hawaiian Salt isn't available)
- 2 Tbsp Liquid Smoke

Make deep slashes in pork butt. Rub liquid smoke and Hawaiian salt on pork. Wrap in aluminum foil (make sure it's wrapped tightly and sealed so no steam/drippings come out!). Place in roasting pan or casserole dish. Bake at 275 degrees for approximatley 4-5 hours. Remove from oven, reserve juice. Shread meat in bowl with 2 forks. Add in reserved meat juice to taste. Enjoy!

I usually eat my kalua with steamed white rice. While rice is not a traditional Hawaiian dish, it has become a staple food in the islands (everyone eats it with every meal!).

Crock Pot Enchiladas
Serves 6

1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Chopped Green Chilies
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup

Instructions:
Brown hamburger and chopped onion and pour off grease.

Put all ingredients in crock pot. Mix and cook low 4-6 hours.

Huervos Rancheros- I dont have a recipe but it's a warmed tortilla partially covered with chili and topped off with a a couple of fried eggs. Basic Southwestern breakfast food.
