MSG is mono-sodium glutamate. Its a chemical flavor enhancer composed of a modified form of the amino acid glutamine which is a component in proteins and sodium. It adds sodium to foods but not protein. Its popular in Chinese-American cooking and sold under the brand name Accent for home cooking. It can also be found in many prepared and prepackaged foods.

Its debatable if it can be harmful or not. Its obviously regarded as safe by the US RDA and widely used in foods. Yet many people seem to think its harmful. It's a flavor enhancer and that can make you eat more. It tends to be added to foods you don't really need to eat anyway so maybe that is how its bad for you.

It is a natural food tenderizer. Since we are all made of meat, it can react harshly where are health is concerned. Use the juice of lemons, vinegar and other fresh items that will not give you a headache. Use a small hammer that you save just for cooking to tenderize your meats. MSG is monosodium glutamate and comes from seaweed. Since it gives many people headaches, people are not using it as they used to do. When you order from the Oriental restaurants, always ask them to not put MSG in your food. You can immediately tell if they followed your request. MSG is monosodium glutamate. Its just something that is added to enhance the flavour. Works similar to salt. Added in small amounts its okay. But the hawkers here like to add in alot because they want to skimp on the ingredients but not the flavour.

Eaten in high amounts will cause dehydration to the person. One sign that the food is loaded with msg is that your jaw seem stiff and your tongue rubbery.

Some people are sensitive to MSG and in those people it causes a reaction that includes flushing, sweating, rapid heartbeat, and dizziness. In people who are not sensitive it doesn't have any effect. I have never heard of any long term effects (like causing cancer).

MSG is a common food flavoring, especially in Asian food. Most restaurants I see now say "MSG free" on their menus, though.

Some people believe if they take it (without knowing) n experience this, the quickest remedy is drink a can of coke and the lousy feeling should go off fairly quickly. It is bad for you because it is known for people to have headaches, nausea, drowsiness, weakness, rapid heartbeat, weak pulse, chest pain, and other sorts of bad things when one uses it. It could even cause high blood pressure.

MSG stands for monosodium glutamate. Since it still contains sodium, it has the same risks as salt, just at a lower level. Glutamate is an amino acid that we use anyway. Just don't use too much, same as salt.
