From a local here, let me make a few suggestions:
First off women love shopping on Elk Avenue, it's a great scene for the kidos too. That will usually entertain for a half a day or so.
There is also a nice park in town that is great for kids as well. Downtown Gunnison also has some great shops.
If they like the outdoors but just don't like biking then I might suggest a hike up Oh be Joyful or Judd Falls. On either of these you could time it and link up with them to end a ride.
There are also numerous spa treatment options in town that are reasonably affordable.
If they are into riding of a different sort, Fantasy Ranch offers horseback riding tours as well.
Also, check the online version of crested butte news, or crested butte weekly, they both have event listings of everything going for the next week.

Oh man I went there once to MTB, it was great, almost as good as where I live. With all of Colorado's hype (durango, gunnison, etc) it was the only place I would go back to ride.
Crested Butte is a little alpine ski type village. They may be entertained the first day by the little shops, etc but that's about it. Sorry.

Hike, walk around town and browse, hang out, etc. Crested Butte is a really cool town. Be sure to check out the Mountain Bike Hall of Fame while you are there.

I can't even breathe when I go to Colorado let alone bike. I would find out how close it is it Boulder? There is quite a bit to do there
