I have just used mushroom soup, but that has no flavor. It will be for potatoes. Thanks

Quick Mushroom Wine Sauce

1 cup white wine
1 can (10oz) mushroom soup

Combine ingredients in medium saucepan. Makes about 2-1/2 cups sauce.

Sherry Mushroom Cream Sauce

2 tablespoon butter
1-1/2 cups mushrooms, sliced
2 tablespoon flour
1 cup light cream
2 tablespoon whipping cream
2 tablespoon sherry
Salt and pepper

Melt the butter in a saucepan and sauté mushrooms for two to three minutes. Stir in flour, then gradually pour in the light cream stirring continuously over medium heat until thickened. Stir in the whipping cream and sherry, and season with salt and pepper to taste. Makes about 2-1/2 cups.

Vegetarian Mushroom Gravy

2 1/3 cups vegetable stock
5 ounces mushrooms, sliced
3-1/2 tablespoon all purpose flour

Combine 1/3 cup stock and mushrooms in a heavy nonstick skillet over medium heat. Sauté mushrooms 7-8 minutes or until they begin to turn brown and liquid has almost evaporated. Remove from heat and set aside. Combine 1/4 cup stock and flour in a jar with a tight fitting lid. Shake vigorously. Combine with remaining stock in a heavy saucepan over high heat. Bring to a boil. Reduce heat to medium and simmer 15 minutes, whisking frequently, until mixture begins to thicken. Add sautéed mushrooms and simmer until just heated throughout. Season with salt and pepper to taste.



Creamy Mushroom Sauce
A very quick and easy dish, when you need dinner in a hurry. Good with any flat pasta like fettuccine, too, if you don't have farfalle.

Ingredients:
1 tablespoon olive oil
1 tablespoon butter
6 cups sliced mushrooms
2 teaspoons basil
1 tablespoon lemon juice or white wine
1 cup plain yogurt or light sour cream
1/4 cup freshly grated Parmesan cheese
Salt and pepper
Pasta

Directions:
Combine Heat olive oil and butter in a large frying pan. Add mushrooms and basil and cook for about 5 minutes, until mushrooms are soft.


Add lemon juice or wine and bring to a boil.


Reduce heat and stir in yogurt. Heat through but do not boil. Stir in Parmesan cheese, and season with salt and pepper to taste.


Meanwhile, cook farfalle pasta. Serve sauce over pasta, and top with additional Parmesan cheese. Makes 4 servings

Classic Mushroom Sauce

Ingredients

(6 servings)

3 tb Butter
3 tb Unbleached Flour
1 1/4 c Brown Stock Or Beef Bouillon
1/4 lb Mushrooms, Minced
1/4 c Chopped Shallots Or Scallions
1/4 c Red Wine


Instructions

One you know how to make this sauce, you will want to put it on top of everything. Steak, roast beef, meat loaf, hamburgers, veal, chicken, turkey, pot roast, baked potatoes, egg noodles--the list goes on. The wine and the shallots especially bring out the flavors of meat and poultry. This sauce will keep in the refrigerator for up to two days. Rewarm over low heat before serving.
Freshly Ground Black Pepper To Taste
Melt the butter in a small saucepan over medium heat. Remove it from the heat and whisk in the flour a little at a time until smooth. Return to low heat and, stirring constantly, cook until mixture turns golden brown, about 5 minutes.
Gradually add the stock, stirring until thickened, about 5 minutes. Pour in the mushrooms, shallots, and wine and combine. Heat through and add pepper to taste.
Yield: About 2 cups of sauce

An easy sauce is made by using a plain white sauce and then adding dried mushrooms to it, for about 10 minutes before serving.

The recipes given here sound great but I have one extra recommendation. Buy the more exotic mushrooms like Shitaki's and Porcini's to get a much better and intense mushroom flavor than the regular run of the mill plain white mushrooms give. The flavors are a lot more intense..

I just slice or quarter mushrooms and saute in butter with garlic and fresh parsley then add some red wine to the mushrooms and simer for about 3 minutes after adding the wine. It's how I've made sauted mushrooms in many of the restaurants I cooked in.

Heres a simple one that i use for pork chops that my family loves.

1 can muchroom soup
1tsp of soya sauce
and a bit of water to make it a bit runnier, mix all togther and pour on whatever! Oh you can add half a can of mushrooms too if you want more mushrooms, enjoy!
