First slice them into strips. Go to the store and get some stir fry frozen packet of vegatables, and if you have a WOK that would be great also, but you can also just use a deep fry pan. Season to your choice, and this will cook in minutes. You may have rice also and for a good dinner with your company shrimp would be a nice additive. If you love wine I would chose a red rosea' . Just remember that actually chicken has really no taste. To prove my point try cooking a breast without any seasoning. It is awful.

Potato Chip Chicken:
ingredients:

1 cup coarsely crushed potato chips ( i use Ruffles sour cream and cheddar- You can use plain if you like)
1 tablespoon minced fresh parsley (if you have fresh if not you can use any jar or spice rack style parsley)
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon onion powder
4 boneless skinless chicken breast halves ( about 1 pound)
2 tablespoons mayonnaise

In a large resealable plastic bag, combine the potato chips, parsley, salt, paprika and onion powder. Brush chicken with mayonnaise; add chicken to the crumb mixture and shake to coat. place in an ungreased microwave-safe 11-in x 7-in. x 2-in dish. Cover with microwave-safe papertowles; cook on high for 8 to 10 minutes or until chicken juices run clear

Boil the breasts, add peeled and cubed potatoes, when the chicken and the potatoes are ready mince both in a food processor and put back into the broth. Bring to boil and add some fresh parsley and a pinch of black pepper. Salt to taste.
It is easy to make, but unbelievably good.

Chicken and Cucumber Linguine
2 tbsp. olive oil

1 tbsp butter

3 boneless, skinless chicken or turkey breasts

1 large cucumber

1/2 an onion, sliced thin

1/2 tsp. ground cumin

1/2 tsp. ground mustard

2 cloves garlic, minced

1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)

3 tbsp. sour cream

1 lb. linguine pasta, cooked and kept warm

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over linguine

Easy Crock Pot Chicken Recipe

4 to 6 boneless chicken breast halves, skin removed
salt and pepper to taste
2 tablespoons butter
2 cloves garlic, minced
3 tablespoons flour
2 cups chicken broth
1 teaspoon dried thyme
1/2 teaspoon dried tarragon
3 to 4 carrots, cut in 2-inch pieces
2 onions, halved and thickly sliced
3 leeks, white part only, washed and chopped
1 bay leaf
1/2 cup half-and-half
1 10-ounce package frozen peas, thawed
PREPARATION
Wash chicken breasts and pat dry. Set aside. Saute minced garlic in butter for a minute, then add flour and cook, stirring, until smooth. Pour in broth (you can use 1/4 cup of dry white wine or sherry in place of some of the broth), the thyme and tarragon, and stir until thickened
Layer in the Crock Pot the onions, carrots, chicken, then leeks; pour sauce over all. Add bay leaf. Cover and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 5 hours. If cooking on low, change to high and stir in half and half and thawed peas. Cover and continue cooking on high another 15 minutes, or until peas are heated through. Taste and adjust seasonings. Remove bay leaf before serving.
Serves 4 to 6.

Wild Rice and Chicken Salad

Ingredients:

14 1/2 oz. can chicken broth
1/2 cup wild rice, about 3 ounces
2 cups diced cooked chicken breast, about 9 ounces
1 large celery stalk, diced
1/2 large crisp red apple, diced
1 green onion, thinly sliced
2 tablespoons minced fresh tarragon or 2 teaspoons dried, crumbled
2 1/2 tablespoons olive oil
1 1/2 tablespoons tarragon vinegar
1 teaspoon Dijon mustard
1/4 tsp. sugar

Combine broth and rice in small saucepan. Bring to boil. Cover and simmer over medium-low heat until rice is tender and liquid is absorbed, about 50 minutes. T

Transfer to medium bowl. Cover and chill.

Just before serving, add chicken, celery, apple, onion, and tarragon to rice. Whisk remaining ingredients to blend in small bowl.

Pour over rice, toss well. Season with salt and pepper.

Serves 2-4.

You can buy that rice that can be cooked in a microwave. I think that its made by Uncle Bens. I like making Liptons mushroom rice that is really good with skinless chicken breasts. Also, if you cook your chicken with mushroom soup all day in a crock pot and then just have it over steamed rice is good too.

You can do a quick and dirty chicken catchitori:
Cook the chicken breasts in a saute pan with some olive oil (I would say just brown them on the stove top then let them finish in the oven normally.)
Smother and simmer chicken with your favorite brand of pre-made tomato sauce (I like Bertolli).
Serve over a wide pasta like linguini.
Sprinkle a little fresh parmesan on.

How about a stir fry? Add the chicken and then whatever else you have laying around. Green beans, peas, corn, etc. will all do great. Also some peppers, apples, or anything like that will be delicious and easy.
