I think it really depends on your taste in cheese and what type of pizza your making. With a traditional sauce, nothing beats a bag of the blended italian cheese (asiago, parmesian, motz, etc.) - that runs about $2.30 here and will cover a pizza for at least one if not two people.
for white pizza you want ricotte and motzarella - this will cost you a little more (about $4.50 but you'll have left over motzarella for sandwhiches afterward).
you could do what my mom did - some pizza sauce on a slice of my favorite toasted bread, a slice of american cheese and pepparoni - inexpensive, tasty and very easy to make!

Mozzarrella is the cheese for pizza and most economical next to sliced. The two best pizzas I ever had were made 1... with fresh Basil leaves put on like a vegetable. I don't remember the cheese that was on it, but I'd guess mozzarrella 'cause ity doesn't have a strong taste and it allows the othertopping flavors like the basil to take over. 2... with blue cheese and I don' remember the other toppings. Blue cheese is an over powering taste. I'm getting way hungry thinking about that one but it wasn't cheap.

I get the 5 cheese Italian blend, it has mozzarella, provolone, parmesan, and 2 other white cheeses that I can't remember and then i also mix it up with some cheddar for added flavor. But what really makes a pizza outstanding is if you spread some chopped garlic on the crust before you put anything, including the sauce on it.

You have to use mozzarella. There's no other way. Don't let people say cheddar or jack or even american cheese is just as good. Nothing melts like mozz!!! It's not expensive, and it may be cheaper to buy it in a block instead of a bag of pre-shredded. Both are in the dairy section. The block tastes much better, and make sure you buy WHOLE MILK MOZZ, not part-skim. Best wishes!

Usuually a blend as most single cheeses tend to burn too much at high temps.
But you can put any kind of cheese on a pizza.
Most pizza makes use mozz and other white cheeses.

my dad, who used to make pizza in a tiny pizzeria in Detroit and then went on to make them in his own restaurant in the Upper Peninsula of Michigan, used and still does use a combination of provolone and mozzerella. Provolone is a wonderful cheese and really isn't much more in price than Mozzerella. An aged Provolone would be spendier but a domestic or smoked should be comparable in price.

You need magic cheese. Try tapping your heels together three times, turn clockwise once and touch your toes; then clap your hands twice and snap your fingers three times--close your eyes and intone in a gracious voice "oh, gods of cheesedom, grant me my wish. Supply me with enough magic cheese for a pizza."
Then go to the grocery store and you should find it in the cheese section.

Riggota Cheese (instead of tomato sauce) Mozzerlla cheese grated and Thin slices of tomato.
It's called a white pizza and it is delious!

mozarella is the best, but I have used marble cheese (1/2 cheddar,1/2 mozarella) with success. Sometimes, a brick of marble cheese is cheaper than the mozarella. Goat cheese is also very good and depending on where you buy it, is usually reasonably priced.
