Best Deviled Eggs
These are the best EVER!
8 eggs, hardboiled
1/2 block cream cheese
salt and pepper to taste
Let cream cheese sit out to soften or place in microwave on defrost for just a minute. Peel and slice hard boiled eggs, scoop out centers. Mix cream cheese with yolks and add salt and pepper to taste.
I also use this to make egg salad, just mash all the eggs with the cream cheese and serve. This is excellent served on a sliced croissant or on a toasted plain bagel.

I think Mimi has a great recipe for deviled eggs. I would wake it up a little & add some minced shallot & cayenne pepper to the mix as you're blending the deviled yolks. I've tried this, SUCCESS!! Use a frosting bag & decorative tip if you're feeling fancy, or just snip the corner off a big ziploc bag & squeeze the mixture into the white shells that way. Then snip some fresh chives over the entire plate & sprinkle w/ paprika. The plate will be empty in minutes!

DEVILED EGG
Creamy Stuffed Deviled Eggs.
The word 'deviled" is in reference to
fiery spices however these are not spicy hot.
12 Hard boiled eggs
1/2 cup mayonnaise
1 tablespoon mustard
1/2 teaspoon salt
One pinch white pepper,
4 or 5 tablespoon juice from a sweet pickle jar (only use enough to get the mixture to look like creamy peanut butter at room temperature.)
1/2 teaspoon sugar
Perfect Hard Boiled Eggs
Green outer line around outside of yoke and cracked shells indicate heat was too high, over-boiled eggs have a strong odor and will effect taste.
Place room temperature eggs in a pot of cold water. Add enough water to completely cover them. Heat them on medium-high until you see several large rapid bubbles rising around the center eggs, reduce heat to medium, time them as you low-boil them for 10 minutes. With a wooden spoon, gently roll eggs several times during the cooking, this will help move the yokes to the center which is helpful when making deviled eggs. Remove pan from heat once the cook time is up. Take the pot to the sink and run cold water into the pan to cool the eggs, let them sit in cool tap water for 20 minutes or longer before peeling perfect hard boiled eggs.
Cut the eggs in half, lengthways, carefully remove the yokes and put them in a bowl. Add all the ingredients to the yokes, mix well until you have a smooth paste (like room temperature creamy peanut butter) Add small amounts of pickle juice to thin if needed.
Fill each egg whites shell halves, heap them full with the yolk mixture with a spoon or fill a "baggie" with the mixture, scissor snip off a bottom corner on bag and squeeze out mixture.
Garnish with a little paprika. Chill well before serving.

curried filled eggs Curried filled Eggs (Serves 4-6) 6 difficult boiled eggs 2-3 T mayo sprint pink wine vinegar a million a million/2 tsp. Dijon mustard 2 tsp. very finely minced pink onion 2 tsp. finely chopped jalapeno pepper a million tsp. curry powder salt, pepper to flavor candy paprika, for garnishing chopped chives or cilantro, for garnishing intently slice eggs in a million/2, lengthwise. Scoop out the yolks right into a small mixing bowl. Mash yolks with a fork, then upload sufficient mayo to moisten and combine. upload sprint of vinegar and the mustard, combine properly. upload diced onion, chipotle powder, and curry, mixing until comfortable and creamy. (upload somewhat extra mayo if the aggregate seems too stiff.) flavor for seasoning and upload salt and pepper to flavor. Spoon the filling intently into egg halves and place on a serving platter. Sprinkle eggs with paprika, and garnish with chives or cilantro if wanted.

deviled eggs are the best.....cook eggs ... boiling....for 3 minutes.
cover and let stand 45 min. scoop centers out and mix with finely chopped onion, sweet pickle relish, mayo, a squirt of spicy mustard, salt and pepper...put in a zipper baggie, cut the corner, and squirt into egg halves......ENJOY!

put the eggs in a pot, put water onin until the eggs are under water. put them on the stove until they boil. Put the top on the pot and turn the sove of. Leave the eggs in the pot for 15 min.
