2 ways:

1. Avoid drinking more than 2 times a week.
2. Avoid the 2 am Burrito.

Watch your fat and carb intake--the two worst things about cafeteria food. Try to have salad for lunch and/or dinner, as either the entree or side dish, and stay away from the high fat dressing. Also, lay off big helpings of the pasta, pizza, potato, and breads. Cafeterias like to use that stuff to fill you up cheaply. Beer is a carb, so if you drink it, it'll show. And skip the donuts for breakfast! Cereal and skim milk, with a piece of fruit is better for you, and stays with you longer.
Last thing is, get some exercise EVERY day. Good for your health, your thinking and your weight. Even if you just take a 30 minute walk every day, it will help. Sign up for some weight lifting--it will build muscle, which burns more calories than fat does. You won't get muscle-bound, just take it easy and you will get toned and strong.

I would recommend not totally blowing your current eating habits, make sure to fit some exercise into your schedule and don't eat anything and everything you want just because you can. It's hard to not fall into bad habits with a busy schedule, a party atmosphere and no parental guidance, but overall I think you'll be happier and healtheir for it. Here is another recent article I saw on this very topic: http://www.slashfood.com/2006/08/21/your-freshman-15-and-how-you-got-there/

Be determined to eat healthy. The freshmen 15 is typical because most kids get out there and see freedom and eat however they want, namely fast foods that are really unhealthy. If you're determined to eat healthy and not let it happen, then it won't. And you can still eat the occassional cheeseburger or piece of cake. You don't have to go nuts about it. Just be smart about it. Once a week a dinner at Burger King won't hurt you if that's the only time you eat like that, you know?

Do not drink, or at least keep it to minimum
if you are worried that people might make fun of you for not getting wasted, say that you're taking antibiotics. I never understood how acting responsible makes you uncool, but the peer pressure can be harsh, so just say that it's medical reasons. Keeping drinking at minimum will help you stay healthy overall.
Avoid midnight snacks and pizza, and stick to your workout routine.
It's easy to grab a beer, chips and just veg out, but whenever you feel like it, just think of the lovely love handles that this will lead to.

Monitor calorie intake, and energy output (in calories burned). You should set your goal to zero net calories to stay the same.
