I like to bake yams or potatoes to go with meatloaf. Then I will make a salad or cook asparugus. I also like to make some garlic bread to go with it.

Green Beans Almondine, Baby Carrots, and a Honey Mustard Glaze for the meatloaf.

Cold potato salad goes great with meatloaf on hot days. Also, mac n cheese goes well and so does a baked potato. Yum!

Chili Corn Mashed
2 Idaho® Potatoes, peeled and cubed, #80 ct. (22-24 oz.)
2 1/2 oz Unsalted butter
1/2 cup Milk
4 cloves garlic, minced
6 oz. Fresh corn kernels
2 tsp. Pure chile powder
1 tsp. Cilantro, chopped
1 tsp. Honey
Salt to taste
DIRECTIONS:
1.In saucepan, place potatoes with enough water to cover by 2 inches. Bring to boil, reduce heat and simmer 15 - 20 minutes, until tender. Drain thoroughly.
2.Meanwhile, in small skillet, melt butter in milk. Bring to boil; add garlic and corn. Reduce heat and let simmer 3 minutes. Sprinkle in chile powder.
3.Strain mixture, reserving corn separately from liquid. Place cooked potatoes in large mixing bowl.
4.With electric mixer, whip potatoes while drizzling in reserved liquid. When consistency is right, stir in the corn, cilantro and honey.
5.Season with salt.

This what I prepare sometimes with my meatloaf

Baked Zucchini Chips

Prep Time:5 Minutes Cook Time:10 Minutes Ready In:15 Minutes Servings:4)

INGREDIENTS:
2 medium zucchini, cut into 1/4-inch slices
1/2 cup seasoned dry bread crumbs
1/8 teaspoon ground black pepper
2 tablespoons grated Parmesan cheese
2 egg whites

DIRECTIONS:
Preheat the oven to 475 degrees F (245 degrees C).
In one small bowl, stir together the bread crumbs, pepper and Parmesan cheese. Place the egg whites in a separate bowl. Dip zucchini slices into the egg whites, then coat the breadcrumb mixture. Place on a greased baking sheet.
Bake for 5 minutes in the preheated oven, then turn over and bake for another 5 to 10 minutes, until browned and crispy.


Okra and Tomatoes

INGREDIENTS:
2 slices bacon
1 pound frozen okra, thawed and sliced
1 small onion, chopped
1/2 green bell pepper, chopped
2 celery, chopped
1 (14.5 ounce) can stewed tomatoes
salt and pepper to taste

DIRECTIONS:
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
Remove bacon from pan and saute okra, onion, pepper and celery until tender. Add tomatoes, salt and pepper and cook until well blended.
Garnish with crumbled bacon, if desired

Mashed potatoes and corn go really well with meatloaf. That's one of my favorite meals.

I'd go with something different like scalloped or augratin potatoes. Actually the Betty Crocker one's that come in a box aren't too bad. As for a vegetable, I would go with fresh pea pods or just open a can of peas.

mashed potatoes are a classic side dish with meatloaf, I would also serve something green such as broccoli, spinach or a nice garden salad.

Mom always made Kraft Macaroni and Cheese and some sort of vegetable (most likely green beans, to provide a contrast in colors...)
