Trust me, I go thru the same thing....I keep my freezer stocked with things that are prepared in a short amount of time. The Banquet brand even makes Fried Chicken that you just pop into the oven, buffalo wings too.

oooh ooooh oooh I just made this!! It's my version of yakisoba: Brown tofu/chicken whatever protein Add vegetables (ie broccoli, chopped carrots, peas, peapods etc) While this is cooking (on low!!) get a block or 2 (depending on how much you need to make) of ramen noodles (the cheap kind!) and parboil (that's fancy restaurant speak for cook mostly) while STILL IN THE BLOCK, ie don't break them up in the water. I find waving em for a minute and a half does the trick. Take the WHOLE BLOCK and put it in with the veggies/protein and stir it up really well. This is one of those situations where a wok comes in handy. Then add the seasoning or your own soy sauce-esque creation, stir and serve!! you might need to add water, but it's pretty easy to tell if you do. Also, using aluminum foil and making bakeable packets is really easy and fast, use stuff like chicken with some herbs and zucchini, broccoli and carrots. Remember that raw chicken has lots of germs though so don't mix it with anything before it's cooked!!

When my kids were young..and both my wife and I worked...we enjoyed this alot....and its easy. It can be made a head of time and simply popped in the oven when u get home.
use a 13' x 9" cake pan (or something similar)
1 to 2 lbs of ground beef (or ground round or whatever u like...even ground turkey)
1 can of any cream of "something" soup (celery, cheese, etc)
1 package of frozen "Tater Tots"
press ground meat into pan...spread soup on top...and place tater tots in rows on top. Bake at 350 for 1 hour.
Instant Meal...and its very yummy

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

I keep pasta on hand...quick and easy! my fav to make is bacon cheeseburger maccaroni....using whatever kind of pasta u like get it started then season and brown ur hamburger and drain it...then turn ur head to low and add some velveta(bout half the brick or about 3-4 handfuls of shredded cheese) and bacon bits and the pasta BUT make sure to add a ladel full of pasta water to make the sauce creamy! its soooooooooooooo good!

brown 2 chicken breasts in olive oil, add sliced onion and sliced mushrooms, deglaze the pan with one tin of cream of chicken soup and bake in the oven until chicken is cooked through and serve over noodles

1. salisbury steak with green beans and betty crocker mash potato's. rolls and ice tea.
2. chicken rotel with corn and green beans or english peas. rolls and ice tea.
3. cha cha's white bean chicken chili with crackers or cornbread.
4. stouffer's lasagna, salad, garlic bread, and ice tea.
5. stouffer's chicken and rice casserole with green beans, rolls, and ice tea.
you and your son eat vegetables! cook him a steak with a bake potato and salad!
