It is a ball of ice cream rolled in honey, corn flakes and cinnamon and then deep fried. It is really good when it is fresh. I have eaten it at many Mexican restaurants. I have never seen any that you could buy and cook at home. I know that there are recipes online to make it yourself.

fried ice cream is awesome.
first crush up some cornflakes
then make ice cream balls about the size of a baseball and roll them in the crushed cornflakes coverin the whole thing
then put tehm back into the freezer and refreeze them...put them on some wax paper so they dont stick to the bottom of the pan or plate or whatever you put them on.
next you need a deep fat fryer...a little frydaddy should work fine.
when the fryer is heated to temp...350...take an ice cream ball in a pair of tongs and dip in the fryer for about 10 seconds or so to make the cornflakes crispy...dont let go of the ball you'll have a big mess if you do....put the fried ice cream on a plate with some warm chocolate syrup.

Here in the south, we can fry anything. Chicken, Steak, Ice cream, Chitlins, snakes, alligator tail, frog legs, Chicken Gizzards/livers, turkey isn't bad...
Anyway. To make this little delicacy, you scoop the ice cream into balls, and stick them in a deep-freeze, or in the bottom back corner of a regular freezer. Make a batter of corn-flakes and honey. very very quickly roll the ice cream through the batter and drop it into the fryer.* 20 seconds later fish it out and drop it on a plate.
* this is the part where you find out if it's frozen "enough". If it's not, you get a lovely ba-woosh of hot oil and steam... You did use tongs, right?

Fried ice cream is AWESOME!!!!!! I don't get it often because I am always too full for desert.. it's not like you can take it home.
Anyway, they take vanilla ice cream and dip it in batter and throw it in hot oil for a min (just long enough to brown the better) it's normally served with chocolate sauce and whipped cream.

it is easy to do.. honest.. you need VERY hot oil.. ice-cream, of course, and something to coat it in, coconut, batter...cover icecream well, and drop in.. about 30 seconds and it should be cooked..
or you can do it in the oven as a baked alaska
