Rayleigh scattering (named after Lord Rayleigh) is the scattering of light, or other electromagnetic radiation, by particles much smaller than the wavelength of the light. It occurs when light travels in transparent solids and liquids, but is most prominently seen in gases. Rayleigh scattering of sunlight by the atmosphere is the main reason light from the sky is blue.

Our atmosphere functions like a giant prism. Light waves bend (refraction) as they go through materials of different densities. Violets and blues are on the upper end (faster) and the reds are on the slower end of the spectrum. Our atmosphere is thin. The light is only slowed down a little bit, so the sky is blue. If the atmosphere were thicker, it would become yellowish, then orange, then reddish.
This is also why the sky is reddish at dawn and at sunset -- the light is travelling at an angle relative to Earth, and therefore passes through more atmosphere, and is refracted more, so it shows up as more red.

When light travels through the atmosphere it gets bent a little. (The same thing happens with light going through rain giving us a rainbow.) During the main part of the day, the light that gets bent towards us is blue, but as sunset approaches the light has to travel through more of the atmosphere to get to us. That's why the sky changes to yellow, then orange and red at sunset. If you are up early enough, the opposite happens at dawn.

The reason we see things a particular color is because the object absorbs the other colors in the spectrum and reflects the color we see. We see the sky blue because the blue gets reflected while the other colors are absorbed.
