Place ingredients 1 through 6 in the crockpot and cook all day on low to
medium. 1/2 hour to onehour before serving; add milk and flour mixture.
After the soup starts to thicken, it is ready to serve.
NOTE: Add 1/4 pound of Velveeta cheese for Cheese potato soup.
: I can evaporated milk may be substituted for the regular milk.

Toasted coconut -- opt
In a 3-1/2 qt slow cooker, combine potatoes, sugar,
margarine, coconut, pecans and cinnamon. Cover; cook on LOW
for 6 to 8 or on HIGH for 3 to 4 hours. Stir in coconut
flavoring and vanilla. Sprinkle with toasted coconut if

2 tablespoons dried onion -- minced or chopped
2 cloves garlic -- minced or 1/4

1 teaspoon salt
1/4 teaspoon black pepper
8 medium potatoes -- scrubbed and sliced
(about 2 pounds)
1 package cream cheese -- (8 ounces) cut in
cubes
Lightly grease Crock-Pot. In a small bowl, combine onion, garlic, salt, and pepper. Layer 1/4 of the sliced potatoes in the bottom of the Crock-Pot. Sprinkle with 1/4 of seasonings. Layer with 1/3 of cream cheese cubes. Continue layering process, ending with a layer of potatoes then sprinkle with seasonings. Cover and cook on High 3 to 4 hours. In the last hour of cooking stir the potatoes to distribute the cream cheese. Serve when potatoes are tender.
Note: If desired, potatoes can be slightly mashed prior to serving. Serves 4 to 6.

For those who have never tried OAMCing, dip your toe in a bit, and bake 20 or
25 pounds of potatoes this Friday or Saturday. Better still, reserve 3-5
pounds of potatoes and make Sylvia's Pretty Quick Potatoes. (first recipe)
This will give you tons of edible food and give you the flavor of OAMCing
without the expense of meat (in case you think it might not turn out, but
don't worry, it WILL!!)
You can pick and choose from the following recipes, depending on your family:
Read over the recipes carefully.
Print out the ones you'll use plus and of your own that would fit into the
potatoe theme.
Then tally up the ingredients you need by using tally marks on a shopping
list.
Go shopping.
Preheat oven
Start water boiling
Poke hole in potatoes
Start baking.
As soon as water is boiling, start grating (Sylvia's potatoes are used raw -
don't let them turn brown!)
Then just follow the directions remembering that it's easier to scoop pulp out
of warm/hot potatoes than cold potatoes :)
4 baked potatoes to eat that night. no recipe: Bacon bits or chili, low fat
sour cream. Broccoli and cheese, whatever.
6 Time-to-Spare spuds (recipe below) --Twice Baked Potatoes
potato salad to eat over the weekend (your favorite recipe -- just use baking
potatoes instead of red potatoes and use more mayo.)
Potato soup to eat and freeze (your own recipe or the Doll's listed below)
Potato, Broccoli and Cheese Bake -- recipe below ---- use the stove top or
microwave, not the crock pot, since your potatoes will already be cooked. Be
careful to not break up your potatoes when you stir!!! Refrigerate to eat
once this week and freeze the rest.
Sylvia's frozen hash browns - freeze all.
If you have any leftover potato skins, try to keep them intact and try your
hand at potato skins (no recipe, experiment)
Any left over potatoes? They'll keep in the fridge for a week (Maybe 2)
OR Slice & Fry in 1/2 butter 1/2 oil for next Thursday's supper to eat with
pork chops and green beans.

Stout Hearted Beef with Garlic Mashed Potatoes

1 bay leaf
1/2 cup prunes -- pitted
2 pounds beef chuck (boneless and trimmed of fat) -- cut in 1" cubes
1/4 cup all-purpose flour
1/4 teaspoon pepper
3/4 cup stout or dark ale
---Garlic Mashed Potatoes---
4 large russet potatoes -- cut into quarters
4 cloves garlic -- sliced
2 teaspoons butter
1/8 teaspoon white pepper -- ground
6 tablespoons lowfat 1% milk
In a 3-quart or larger electric slow cooker, combine onion, garlic, carrots, parsley, bay leaf, and prunes. Coat beef cubes with flour, then add to cooker and sprinkle with pepper. Pour in stout. Cover and cook and low setting until beef is very tender when pierced (8 to 9 hours).
About 30 minutes before beef is done, prepare Garlic Mashed Potatoes:
Cut potatoes into quarter lengthwise and place in a 3-1/2 to 4 quart pan. Add garlic, cover with water. Bring to a boil over high heat; reduce heat to medium-high and cook, partially covered, until potatoes are very tender when pierced (about 25 minutes). Drain well, then add butter or margarine and ground white pepper. Beat with an electric mixer until smooth; then mix in 4-6 tablespoons of milk, beating until creamy. Season to taste with salt.

Sour Cream and Onion Potato Casserole
3 (5.2 oz.) pkg. dried hash brown potatoes (you'll find them by the mashed potatoes in a box)
3 Tablespoons margarine or butter, melted
2 (12 oz.) containers sour cream potato topper with chives and onions (if you can't find this use plain sour cream and add some dried chives and dried minced onion if you want)
1 (10 3/4 oz.) can condensed cream of mushroom soup
8 oz. shredded cheddar cheese
5 cups water
1/2 cup french fried onions
In slow cooker combine dried potatoes and melted margarine; toss to coat. Add potato topper, soup, cheese and water. Stir to mix.
Cover; cook on low setting for 5-6 hours. Do not stir at all!!! Sprinkle fried onions over top and serve.
