7-Minute Dinner Easy, Cheesy, Frittata:
4 eggs
2 egg whites
1 cup part-skim ricotta
2 tablespoons water
1/2 cup chopped pimientos, drained
1 cup 1 cup corn kernels (canned, drained, or frozen and thawed)
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon butter
Prep: 2 minutes
Cook: 5 minutes
1. Preheat broiler to high.
2. In a large bowl, whisk eggs, egg whites, ricotta, and water until creamy. Stir in pimientos, corn, salt, and pepper.
3. Melt butter over medium heat in a 10-inch ovenproof nonstick skillet (cast iron works really well). Pour the egg mixture into the skillet. Cook for three minutes, until the bottom and sides of the frittata are set. Don't stir!
4. Carefully remove skillet to the broiler and cook six inches from the heat source for two minutes, or until the top is golden and set. Cut into four wedges. Serve with chips and salsa.
TIP: Swap herbs, mushrooms, or spinach for the corn and pimientos. Or try a sweet version: Instead of pimiento, corn, salt, and pepper, and 1 Tbs of sugar. Cook as directed. Serve with strawberries.
Yield: 4 servings

Something filling, yet healthy- how about some Chinese Pork Chops- you take 4 (or more, depending on how many you have 4 dinner) Pork or Veal Chops, trimmed of fat,
1tbsp canola oil
1/2 cup apricot preserves
1/4 cup soy sauce
1/4 cup white wine
Preheat oven to 350 degrees.
In large skillet, brown chops in oil.
Meanwhile, spray baking dish with cooling spray. When chops are browned, lay them in the baking dish.
In small bowl- combine remaining ingredients and mix well.
Pour over chops-cover and bake until tender-45minutes to 1hour.
YUMMIE!
Have you some Ramen Noodles with peas for a side dish.
Or you can just come to my house for dinner tonight- we are having Chilidogs and Macaroni w/cheese

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

stuffed hamburgers! make ur patties 1/4 of an inch thick then in the middle put bacon bits n cheese and then put ur 2nd patty on top and press down the edges! pan fry over med heat til done or grill! either way an easy dinner with no mess!
