Traci's Fair Funnel Cakes

3 eggs
1/4 c sugar
2 c whole milk
3 2/3 c of all purpose flour
1/2 tsp salt
2 tsp baking powder


Beat together eggs and sugar. Add milk slowly and beat. Add all dry ingredients, beat until smooth. Pour batter in a funnel--hold the hole closed w/ your finger. Next, remove finger and creat designs while pouring it into the hot oil. BE VERY CAREFUL!!!!!!! (2 inches of oil).

Turn onto other side until both sides are golden brown. Drain on paper towels and sprinkle w/ powdered sugar. We also like to add cinnamon as well.

1 c. flour
1 tsp. baking powder
1 tbsp. sugar
1/4 tsp. salt
1 tbsp. shortening
1/3 c. milk

Mix dry ingredients in large bowl. Blend in shortening with pastry blender. Stir in milk with a fork until soft dough is formed. On lightly floured surface, knead dough 2 or 3 times. Pat smooth to 1/2 inch thickness. Cut into fourths with a floured knife.
Place two at a time into the deep fat fryer, turning often once they reach the top to brown evenly. Cook for 4-5 minutes. Drain on paper towels. You may sprinkle with cinnamon, confectioners' sugar or butter. Sit and eat.

You can also use a packaged pizza dough if your grocery store carries it and you don't want to make your own dough. Do not use the Pillsbury dough that comes in a can, though. It doesn't work too well for frying. Some stores will get deliveries from a local Italian restaurant or you might find an Italian grocery store, deli, or restaurant that will sell the dough to you.

You can top fried dough with the cinnamon suger or powered sugar, as mentioned above. It's also very yummy with pizza sauce and parmesan cheese! Or just butter and parmesan cheese.

I asked this to someone the other day actually. Use pizza dough like you buy at Big Y. Shape it and leave it out for a few hours to rise. Then after it has risen, buy lard. I've never used the stuff myself, but I guess it doesn't make the dough taste weird like oil would. Then put it in a pan and cook.

knead 5 mins til it comes together
allow to rest for an hour, covered in a bowl w damp towel
stretch into tortilla-like shape and fry in 365 F oil til golden brown...

top with slices of cheese, jam, sprinkle with sugar, or eat plain

I saw this at a Chinese Restaurant. They put those pop open kind of biscuits in a deep fryer, took them out when they were done and dusted them with sugar.
