VEGGIE TORTILLA WRAP - (I make often, Is Good)
1 (9") Flour Tortilla
2 Thin slices Cheese (Monterey Jack or Swiss is good)
1/2 Avocado, sliced thinly
1/3 C leftover grilled vegetables
(like zucchini, mushrooms, onions, peppers, etc.)
1 Large lettuce leaf
2 T Balsamic Vinaigrette Dressing
Serves 1 (multiply by the number you are making)

Place lettuce leaf across the middle of the tortilla. Top with cheese, avocado and grilled vegetables. Sprinkle with dressing. Fold egg-roll style, tucking in sides as you roll.

well this is my fav. not exactly what i would call good. this is a vegan vegetarian thingy.. so it may suck.

peppers: red, green, yellow, orange.
onion, leek (if you wish) , pineapple slices. (this is your steaming veggies)

chives, or diced raw onion (don't cook this stuff just tell it to hold onto it's horses til you're done steaming the other guys...)

chop to your liking the peppers, onion and the leek, steam gently for 5 minutes... steam not boil!
toss in pineapple at the end, steam another minute.

(no oil, just a smattering of water, keep your eyeball on it so the pan don't dry out or the veggies stick...) stir frequently.. dash some vinegar if you so like while the veggies settle in the pan.

6 whole minutes of steaming is it.. IF you like crisp, fresh veggies.. want them softer? well steam more.

want meat in this? well pick your poison and toss that all in before you go throwing the veggies in... make sure you brown the ends of the "chicken" or "beef" strips a little to taste, your preference. stir fry this junk with a bit of white wine, chardonny is my choice... to keep it from sticking.. squirt a bit of lemon slices into it.. for taste.. :D it's nice trust me so what i'm a vegetarian i cook meat too for those carnivores out there.

(meat just cook til lightbrown or slightly crisp on sides, ends)

or to you liking.. generally 10 to 15 minutes. (alone, then toss the veggies in on it... adding chardonny and a bit of water to steam for 6 more minutes. keep those veggies crisp.



drain (if you have to) - get rid of the excess water.. you really shouldn't have any if you're good at steaming (that is)


toss into bowel and stir in some: sour cream, chopped chives.

stir.. to it's all evenly mixed for scooping and plopping into the bread shell, pita, tortilla, taco whatever it is you like to use for the wrap.

there you have it.

this is a generalised recipe. do things you wish to add for taste and quantities are your preference.

this is so easy even a blind, armless monkey can do it too.
(bad joke i know whatever, sue me.. no don't do that!)

and enjoy.

there's no extra fats in this 'cept the sour cream and meat (make sure it's skinless and not very marblized) cooking it in chardonny and water doesn't add much carbs or fat.

and it won't be oily.

I made some today for lunch using cream cheese (I'm assuming you just mean vergetarian and not vegan), thin strips of cucumber, alfalfa sprouts, and some chipoltle (or adobo) sauce. Wrap it in a whole wheat tortilla and get to munchin!

I don't really have a recipe, but i love the caesar wrap at Real Food Daily.
If you look at their menu maybe you can get inspired.

I grill green and red bell peppers with onion (My bf adds mushroom to his) with a little olive oil until they are soft. Wrap with white american or sharp cheddar cheese and Italian dressing

1) stirfry slightly red, green and yellow pepper stripes, add fresh avocado slices, salt, pepper, a dash of lemon juice, fresh coriander and wrap
2) grill yellow or peppers and zucchini, dash of olive oil, lemon juice and oregano or fresh basil. or fresh mint
3) Fallafel (chickpeas-balls) chopped onions + frsh parsley
4) practically you can mix all your fav veggies and enrich with fresh herbs
