SOUTHERN GRILLED BARBECUE RIBS
INGREDIENTS:
4 pounds baby back pork ribs
2/3 cup water
1/3 cup red wine vinegar
1 cup ketchup
1 cup water
1/2 cup cider vinegar
1/3 cup Worcestershire sauce
1/4 cup prepared mustard
4 tablespoons butter
1/2 cup packed brown sugar
1 teaspoon hot pepper sauce
1/8 teaspoon salt

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Place ribs in two 10x15 inch roasting pans. Pour water and red wine vinegar into a bowl, and stir. Pour diluted vinegar over ribs and cover with foil. Bake in the preheated oven for 45 minutes. Baste the ribs with their juices halfway through cooking.
In a medium saucepan, mix together ketchup, water, vinegar, Worcestershire sauce, mustard, butter, brown sugar, hot pepper sauce, and salt; bring to a boil. Reduce heat to low, cover, and simmer barbeque sauce for 1 hour.
Preheat grill for medium heat.
Lightly oil preheated grill. Transfer ribs from the oven to the grill, discarding cooking liquid. Grill over medium heat for 15 minutes, turning ribs once. Baste ribs generously with barbeque sauce, and grill 8 minutes. Turn ribs, baste again with barbeque sauce, and grill 8 minutes.
WHISKY GRILLED RIBS
INGREDIENTS:
2 (2 pound) slabs baby back pork ribs
coarsely ground black pepper
1 tablespoon ground red chile pepper
2 1/4 tablespoons vegetable oil
1/2 cup minced onion
1 1/2 cups water
1/2 cup tomato paste
1/2 cup white vinegar
1/2 cup brown sugar
2 1/2 tablespoons honey
2 tablespoons Worcestershire sauce
2 teaspoons salt
1/4 teaspoon coarsely ground black pepper
1 1/4 teaspoons liquid smoke flavoring
2 teaspoons whiskey
2 teaspoons garlic powder
1/4 teaspoon paprika
1/2 teaspoon onion powder
1 tablespoon dark molasses
1/2 tablespoon ground red chile pepper

DIRECTIONS:
Preheat oven to 300 degree F (150 degrees C).
Cut each full rack of ribs in half, so that you have 4 half racks. Sprinkle salt and pepper (more pepper than salt), and 1 tablespoon chili pepper over meat. Wrap each half rack in aluminum foil. Bake for 2 1/2 hours.
Meanwhile, heat oil in a medium saucepan over medium heat. Cook and stir the onions in oil for 5 minutes. Stir in water, tomato paste, vinegar, brown sugar, honey, and Worcestershire sauce. Season with 2 teaspoons salt, 1/4 teaspoon black pepper, liquid smoke, whiskey, garlic powder, paprika, onion powder, dark molasses, and 1/2 tablespoon ground chili pepper. Bring mixture to a boil, then reduce heat. Simmer for 1 1/4 hours, uncovered, or until sauce thickens. Remove from heat, and set sauce aside.
Preheat an outdoor grill for high heat.
Remove the ribs from the oven, and let stand 10 minutes. Remove the racks from the foil, and place on the grill. Grill the ribs for 3 to 4 minutes on each side. Brush sauce on the ribs while they're grilling, just before you serve them (adding it too early will burn it).
DYNAMITE BOURBON RIBS
INGREDIENTS:
1 cup dark brown sugar
2/3 cup bourbon
1 cup light soy sauce
4 cloves garlic
3 pounds country style pork ribs

DIRECTIONS:
Process brown sugar, bourbon, soy sauce, and garlic in a food processor or blender to mince garlic with other ingredients. Pour over ribs, and marinate for several hours in the refrigerator.
Preheat an outdoor grill for medium heat, and lightly oil grate.
Place ribs on grate, and cover. Cook for 45 minutes to 1 hour depending on thickness of your ribs. When finished, the internal temperature of the ribs should be 160 degrees F (70 degrees C) when taken with a meat thermometer.

Rub them down with Grill Mates Montreal Steak Rub and let them cook.
If your looking for BBQ this is my own personal recipe. One bottle of your favorite sauce, 1/2 to 2/3 of a can of Coke maybe if you use 1/2 can you can use a splash of pineapple juice. either way you want the sauce to be kind of thich so it don't all drip off. finely chop an onion into the sause and brush on while cooking it works very well around here. you can also use the same sauce and bake the ribs in it if it rains you out. just cook them really slow

CLARK'S BARBECUED PORK RIBS
At Clark's Outpost Barbecue in Tioga, Texas, Warren Clark uses St. Louis-style pork ribs (slabs of ribs that have been trimmed to uniform size) and prepares them in a smoker. To make this recipe easier, we call for the more readily available baby back ribs and suggest a combination of baking and grilling for equally delicious results.
5 pounds baby back pork ribs, cut into 8 pieces of about 6 ribs each
4 cups Clark's Barbecue Sauce* (about two 16-ounce bottles)
16 tablespoons Clark's Ole #8 Rib* Rub (about two 4-ounce jars)
3 cups (about) water

Preheat oven to 300°F. Rinse ribs under cold water. Pat dry. Arrange ribs bone side up on 2 heavy large baking sheets with rims. Brush 1/4 cup sauce on each 6-rib piece. Sprinkle each with 1 teaspoon rub. Turn ribs over. Brush each piece with 1/4 cup sauce. Sprinkle each piece with 1 teaspoon rub.
Bake ribs meat side up 1 1/2 hours. Add 1/2 cup water to each pan. Continue baking until ribs are deep brown, every 30 minutes adding 1/2 cup water and basting, about 1 1/2 hours more.
Prepare barbecue (medium-high heat) or preheat broiler. Grill ribs until lightly charred, about 2 minutes per side.
Serves 4.

Steam or boil then first, for 30 to 45 minutes. Make sure they get a good bit of smoke while grilling them. Use a vinegar based BBQ sauce rather than a sugar based one.
Sauce: Williamson Bros or Stubbs are both good

i marinate mine in 1 can of beer,dash oif soy sauce,ground fresh garlic,and any spices you like.i marinate them over night then slow cook on the grill. you can preboil them with onion ,celery,and garlic for a fast way.slow cooking is the secret to tender ribs.

marinate in your favorite BBQ sauce (not steak sauce) and some water.
For an asian taste: soy souce, some sugar, lots of green onions, a little ginger, mariante over night.
Another asian taste: marinate in chinese Black Bean sauce
