Zucchini, Italian Style
2 T. oil
1 1/2 lbs. thinly sliced zucchini
1 T. water
salt and pepper
1/2 tsp. dries sweet basil
6 T. shredded Romano or Parmesan cheese
Using a large oven proof frying pan, heat 1 T. oil. Arrange squash in pan, add water and season lightly with salt, pepper, and basil.
Cover and cook over medium heat for 5 minutes, or until crisp. sprinkle with cheese and drizzles remaining oil. Place under a pre-heated broiler and broil until cheese melts and browns slightly.

Zucchini Chili

1/2 cup olive oil
2 cups zucchini, diced 1/2 squares
2 med onions, diced
4 cloves garlic, chopped
2 lg. bell peppers, red or green, cored and diced
1 35 oz. can tomatoes with juice
2 T. chili powder
1 T. ground cumin
1 T. dried basil
1 T. dried oregano
2 tsp. ground black pepper
1 tsp. salt
1 tsp fennel seeds (opt)
1/2 cup chopped fresh parsley
1 can red kidney beans, drained
1 can canned garbanzos (chick peas), drained
2 tsp. dried dill weed
2 T. lemon juice

Heat oil in lg skillet over med heat. Add Zucchini and saute until tender (5-7 min) Transfer zucchini to a large cooking pot. Saute onions, garlic, and peppers about 10 min. Transfer to pot. Add canned tomatoes, juice and seasonings. Simmer uncovered for 30 min. stirring frequently. add drained beans and simmer for a n additional 15 min. Serve with sour cream, grated cheese and sliced green onions on the side.

Zucchini Oatmeal Cookies
3/4 c. butter
1 1/2 c. packed brown sugar
1 egg
1 tsp. vanilla
1 tsp. grated orange peel
1 cup flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. cloves
1 cup raisins
1/2 cup chopped nuts
3 cups oatmeal
2 cups shredded zucchini
Cream Butter and sugar, add egg, vanilla and orange peel, beating until fluffy. In a small bowl, combine flour, salt, baking soda, and spices. Add to creamed mixture, blending well. Stir in raisins, nuts, oatmeal, adn zucchini. Drop by Tbls of dough 3 inches apart on a greased cookie sheet. Bake at 375 degrees for 12-15 min.

Zucchini squares
Yield 24, 2 in squares
this a low fat, low cholesterol dessert.

1 cup sugar
1 1/2 cups flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. baking powder
1 1/2 tsp grated orange peel
2 egg whites or 1 whole egg
1/2 cup frozen orange juice concentrate, thawed but not reconstituted
4 T. vegie oil
1 cup grated, drained zucchini
1/2 cup nuts (opt)
Combine sugar, flour, baking soda, cinnamon, baking powder, and grated orange peel in a bowl. In another bowl, beat egg whites (or whole egg) lightly. Add orange juice and vegie oil. Fold into dry ingredients. Add zucchini and nuts.
Bake in a greased, floured 9x13 in baking pan at 350 degrees for 40 minutes. Dust with powdered sugar while still warm or frost with cream cheese frosting when cool.

I've been cooking for a looong time and this quick and easy zucchini dish is one of my favorites.

Slice zucchini and yellow squash.
Dice tomatoes.
Dice onions.
Mince fresh garlic.

Put a small amount of olive oil in pan and heat to medium. Add tomatoes, onions and garlic.

Saute just until soft, add the zucchini and squash. Saute just until zucchini and squash are soft.

Plate the dish and add some freshly ground black pepper and some Parmesan cheese.

Quick, colorful, nutritious and delicious.

The amounts depend on how many you are cooking for. You want just enough tomatoes, onion and garlic to compliment the squash.

zucchini bread!

3 eggs
1 cup olive oil
2 cups sugar
2 teaspoons vanilla
2 cups coarsely grated zucchini
3 cups all purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
cinnamin, nutmeg, etc to taste
1 cup chopped walnuts
1 cup raisins

Preheat oven to 350 degrees, grease pan and set aside. Add all the dry ingredients, then the wet ones, mixing with a hand blender. Then, fill the pan 3/4 and bake for about 45 min- 1 hour. Test with toothpick. When it comes out clean, the bread is done.

Slice your zucchini into 1/2 inch rounds. Dip in flour/egg wash/ and a seasoned bread crumb mixture with a little garlic and parmesan cheese (not the shaker kind) and a pinch of cayenne pepper. Put a little oil in frying pan and fry till golden brown. They'll still have a little crunch to them. Serve as a side dish or just as a snack with a little dip of your choice.

It's grilling season! Mix a little bit of balsamic vinegar and olive oil. Cut some zucchini, yellow squash, carrots and baby eggplant lengthwise then across at an angle. Slice some red onion, mushrooms and red pepper. Or choose any vegetable combo you like.
Toss in balsamic and oil mixture. Grill. Enjoy!

stuffed steak Ingredients

Flank Steak 1 1/2 pound

Zucchini 1 cut into strips lengthwise

Olive oil to coat steak

Salt and Pepper

Button mushrooms 5 ounces (about 9 mushrooms

Roasted red peppers 1 jar, cut into strips

Natural string

Parsley 2 tablespoons, chopped

Thyme 1 tablespoon, chopped
Get Cookin'

1.Trim any excess fat off the beef.
2. Carefully butterfly the steak so that it opens up like a book.
3.Coat zucchini strips and mushroom with a little oil, salt, and pepper, and cook in the grill pan for a couple minutes on each side.
4.With steak opened up, layer zucchini, mushrooms and red pepper strips.
5.Close up the steak and secure with kitchen string
6.Rub with olive oil, and sprinkle with chopped parsley, thyme, salt and pepper.
7.Grill steak on each side for about 5-7 minutes for rare or until done to your taste.
8. Allow steak to rest, 10 minutes, before slicing.

4 cups cubed zucchini
2 tomatoes diced
1/3 cup milk
1/2 cup onion diced yellow or green (preference)
1 garlic clove smashed or finely chopped
1 can creamed corn
grated long horn cheese
salt & pepper to taste
oil, cooking spray or butter

Saute onions & garlic in the oil, pan spray or butter til soft. If u want you may saute a jalepeno with that. Add zucchini, tomatoes & milk. Simmer untill tender. Add cream corn & cheese. Cook until cheese is melted

I make a nice frittata and put zucchini on top.
I also put it in stir fries, spaghetti sauces and soups.

Frittata base
4 eggs
1/4 c water
1tsp chives
garlic to taste
ground pepper
dash of salt

What goes in and on top
1 1/2 cups assorted mushrooms
peppers and onions combined
1 med tomato cut in slices
1/2 cup zucchinni,cut in slices
1 cup of grated sharp cheddar.

veggies. I pre cook chopped mushrooms, onions and red
peppers. Put to the side
Beat the egg and the water till the mixture is just a little fluffy then fold in seasoning.
Use a medium sized frying pan and let it heat up. I like a non stick pan but I still add about 1tsp olive oil
When pan is hot put the egg base in, wait about 1 minute for the base to start to solidify. Add the chopped veg.
Let it firm up for about 4 minutes.
Turn on your broiler and let heat up
Add slices of zucchini and a bit of fresh ground pepper
Put under broiler and cook till zucchini starts to brown and 'sweat'
Add layer of tomato and put under broiler again. Tomatoes will start to cook.
Put on cheese and return to broiler to melt.
