I assume your talking about boneless skinless chicken breast.
Here is as basic as it gets and very good:
Place a chicken breast into a heavy duty zip lock bag.
Then pound the meat flat with a skillet or the smooth side of a meat tenderizer. You want about 1/2 to 1/4 inch thickness.
Remove from the bag and very lightly coat with a small amount of vegetable oil.
Lightly salt and pepper the meat
Throw onto a hot no-stick skillet and cook until no longer pink in the middle, turning frequently. Or put it on the outdoor grill and grill it.
It's great this way and cooks fast without drying out..

Hot Chicken Salad
2 lb. boneless, skinless chicken breasts
1 can (10-3/4 oz) condensed cream of chicken soup, undiluted
2 cups (16 oz) sour cream
1 can (8 oz) mushroom stems and pieces, drained
2 tbsp chopped onion
2 tsp salt
2 cups (8 oz) shredded cheddar cheese
2 cans (2.8 oz each) French-fried onions
2 bay leaves
4 cups diced celery
2 cups mayonnaise
2 cups (8 oz each) water chestnuts, drained
1 cup slivered almonds
2 tbsp lemon juice
1/2 tsp pepper
Preheat oven to 350 degrees. Place chicken in a Dutch oven and cover with water; add bay leaves. Bring to a boil. Cook uncovered until juices run clear. Remove chicken and cut into 1/2-inch cubes; place in a large bowl. Add the next 11 ingredients. Transfer to a 13x9x2 baking dish (dish will be full). Sprinkle with cheese and onions. Bake uncovered for 30 minutes or until heated through.

I did one last night, based on an idea from a restaurant I was in this weekend.
Marinate the chicken parts (for at least a half hour) in a mixture of beer and Dijon mustard. Grill it. Pour on extra marinade as necessary to keep it moist while cooking.
I was planning to reheat it with cheese like the restaurant did. But it tasted so great I skipped that step

Here's the Mochiko Chicken recipe:
2 lbs. chicken thighs or breasts
4 tbsp mochiko (rice flour)
4 tbsp sugar
5 tbsp soy sauce
1/2 tsp salt
2 eggs
1/4 cup green onions, chopped
2 cloves garlic, minced or crushed
oil for frying
Debone chicken and cut into bite size pieces. Mix together remaining ingredients and pour over chicken; marinate at least 5 hours in refrigerator. Heat about 1 inch cooking oil in skillet; place chicken in oil and cook til golden brown.

ok broil some skinless boneless chicken with
onion powder
garlic powder
salt
lemon pepper
paprika
and basil
(i don't put measurements on here because u can put enough to fit your taste!!)
then cook some white rice and serve the chicken on top of the rice with some picante salsa to go over it!! it's goes great with fresh garden salads! lol i luv this recipe and i hope i helped!!

Place 3 or 4 chicken breasts in a roasting pan. Add one can of cream soup (broccoli, mushroom, chicken, celery, etc.), one can of water or milk (your choice) and bake at 350 degrees F for 30 to 40 minutes. Simple but very good. Or you could use bbq sauce instead of the soup. Still good.

CHICKEN MARSALA - In a frying pan, butter (melted) sliced mushrooms (Lots). cook until mushrooms start to soften. In a second frying pan cook Chicken (boneless, cut into pieces or strips and coated with flour) in butter, until edges on all sides start to brown. In first frying pan, add finely diced garlic and a generous amout of Marsala wine to mushrooms and heat vigorously for about two minutes, add chicken from second frying pan and cook until sauce thickens (flour from chicken will thicken sauce). To finish, add a spritz more Marsala wine (important, to sharpen Marsala flavor) and serve. - ENJOY

Add taco seasonings and you have tacos, tostadas, or a great chicken salad, just don't forget your lettuce tomato etc. you get the idea. Or you can add spagehetti sauce and mostacolli noodles mmm.
