My car was running hot - flushed the system ,replaced thermostat, replaced radiator (ouch), replaced electric fan. Now the computer says it is running 219-235 but the gauge pegs on H?

It is now water pump time the impeller may be gooped up or not spinning fast enough to move water, sounds like you have already hit the rest. 220 isn't too bad in summer 180, 190 should be t-stat spec. remember it is under about 15 PSI so it will not boil like normal pressure water in a pan. Change the hoses if you haven't already they could be collapsing at higher RPM be sure the spring is in the lower to help hold it open as the pump will pinch it off sucking H2O out of the radiator..

try changing the sending unit. mine said it was running right above C most of the time, sometimes jumping to 1/4. it only costs $6. I have an 89, not a SuperCoupe
