I'd personally recommend Canon. The first thing to do is set a budget. The number of MP (megapixels) will determine how large you can blow up (enlarge) your picture. #MP is basic, and will produce 7" * 5" prints. Go to www.epinions.com to read customer ratings before you buy. Find out the real pros and cons on each model.
Good luck!

The Panasonic Lumix FZ7 is one of the best cameras on the market. It has the largest optical zoom of any non-SLR camera (12x). It has a 2.5" LCD screen with a High-Angle mode that allows you to take pictures easily in crowds. It also has a simple mode for beginners and a full manual mode for more advanced users. Its video is superb. Even better, it comes with a lens adapter and lens hood to minimize glare.
I bought this camera a month ago and am very pleased with it. I can take closeup pictures of things from so far away. It is light and small for the amazing zoom you get. I would highly recommend this camera.

I would recommend that you look at Casio Exilim line of digital cameras:

http://exilim.casio.com

They are available at Radio Shack at http://www.radioshack.com

I have the Exilim S500, which is a small, thin, awesome camera. It even takes high-quality video, and is a sheer joy to use. My dad, who is not technical at all, has the older version of mine, and loves it. Casio has build very easy-to-use menus in the camera that anyone can use. I would get at least 5 megapixels (which the S500 is) or the 6 megapixels (which S600 is). Give Casio a try!
