Granny Smith or Gala Apples are the best for baking... here is why!
Granny Smith and Gala Apples are very similar in cellular structure, the cellulose walls are thicker in these apples which allows them to retain their natural juices when cooked more effectively than other types of apples. MacIntosh was suggested, and I would recommend against it because MacIntosh are used almost exclusively in apple juice and apple sauce, for the reason that they become mushy when cooked and the juice flows freely from them...
You know what that means... watery apple cobbler!
If I could offer you a small bit of advice on your preparation...
Your best methodology for creating a fantastic apple cobbler or pie would be to cook the apples before you bake the cobbler! If you take a large saute pan or skillet and with a little butter saute your apple segments with some sugar, cinnamon, brown sugar, and flour... you will have PERFECT apple filling. No water in the bottom of your dessert, and happy diners! You will look like a pro!

Granny Smith apples are best because they have that sharper, tangy flavor that works well in a bake. Sweeter varieties such as red delicious might be great to eat raw, but they turn out too bland when you bake them.

Pretty much all apples are suitable for baking as long as they properly ripe and not soft to begin with.
For cobbler I recommend granny smith or fuji. If you use fuji, use less sugar because they are sweet.

There are several you could use:
Rome: this apple has a mild, sweet flavor with a firm texture. (most popular for baking)
Jonathan: Juicy flavor with a spicy tang and tender texture.
Empire: Sweet-tart taste and extra crisp.
McIntosh: Juicy with lightly tart flavor.
Granny Smith: Crisp with sour apple flavor. Good all purpose apple.

I'd used Granny smith, or fuji but any apple should do as long as it's ripe and not too soft. You should try and mix then for better flavor.
