the italians make several shapes for a reason... there isnt a best, just a most appropriate for a sauce - rotini or fusilli are good because more surface area cling to the sauce but the experience of spearing each with a fork suits it for accompanying a sauce that has chunks to be speared as well, for example, chunks of shrimp and zucchinis, cherry tomatoes etc... on the other hand, there is long pasta meaning spaghetti, fettuccine, linguine, which serve other purposes and a total different eating experience... fettuccine are good with cream sauces and pestos which tend to cling well to the pastas flat surface.... then when eating cetain dishes like 'aglio, olio, peperoncino" and lots of seafood pastas italians swear by spaghetti.... then theres the whole fresh homemade pastas and filled pastas.... if you think about the match between the pasta and the sauce, then there is one more appropriate than another, but overall in general which one is best i think that will always depend how youre using it

I'm partial to the fresh angel hair (vermicelli) pasta you find refrigerated at the grocery store. It cooks in a flash and is just great with meat sauce and meatballs. (Also, believe it or not the best spaghetti sauce is Hunts in a can! I always thought the sauce in the glass jars was the best, but Hunts beats them all. Very very good.)

Rotini is on my top 5 list for sure, but I like Angel Hair. Its versatile, easy to cook and find and its called "Angel Hair".
Can it really get any better than that??

Rigatoni is the best because it's hollowed out and has grooves which holds more sauce. Here's a great recipe...Mix Rigatoni, sauce, ground meat, mozzarella cheese and spices (garlic basil etc) into a bowl and mix. Put mixture into a casserole dish and cover in provolone and bake...fantastic meal...bellissima!

Try zuchini, and crook neck squash diced with your favorite marinara sauce and rotini.

Real Italian pasta or homemade pasta.
The shape all depends on what kind of sauce.
With white sauces, I like penne, bowtie, fettuccine, and linguine.
With red sauces, I like angel hair, fusilli, or spaghetti.

Fresh homemade pasta only takes two large eggs and about 1-1/4 cups of all-purpose flour with a pinch of salt. I love my pasta maker, hand cranked cost about 25.00 and mmm the difference between fresh and store bought is incredible
